Description
Herdade do Sobroso is located in Vidigueira in the Alentejo region. This is one of the oldest wine regions in Portugal. In the beautiful Alentejo, Herdade do Sobroso has a perfect location with its vineyards located on the banks of the Guadiana River. It is the perfect setting for the ripening of the grapes and few vineyards have this luxury and this partly explains why this winery can make very fine wines because there is never a water debt. In addition to the fact that there is sufficient water, this region is the only one within the Alentejo that has the influence of the ocean that ensures healthy ripening. With its 1600 hectares, Herdade do Sobroso is a household name in the region. The wines from the 60 HA of vineyards are famous but also the Luxury Wine Hotel of Hedade do Sobroso and the abundance of flora and fauna.
Originating from centuries-old olive trees, Herdade do Sobroso Premium Blend olive oil is produced according to Alentejo tradition, from hand-picking to cold extraction. Intense, aromatic and unique, just like the Alentejo...
On this great domain, in the unspoiled nature, there are also a multitude of very old olive trees on which the wonderful refined Galega olives hang (a typical Portuguese variety). After picking, the Galega olives are immediately cold-pressed on the spot and bottled unfiltered. What makes this cold-pressed Premium olive oil so special is the refined, soft nutty taste with hints of wood and earth. Highly recommended with delicate salads, grilled vegetables and appetizers.
Incomparable to mass produced olive oil.

1. Burrata with tomato, basil and olive oil
The creamy texture of burrata combines beautifully with the fruity and slightly spicy notes of the oil. Ripe tomatoes and fresh basil provide freshness, while a generous drizzle of olive oil rounds off the dish with depth and elegance.
2. Oven roasted vegetables
Vegetables such as peppers, courgettes, carrots and red onions come into their own when roasted in this extra virgin olive oil. The oil enhances the natural sweetness and adds a subtle green touch that makes the whole harmonious.
3. Linguine with lemon, garlic and parsley
A simple pasta where oil plays a leading role. By using olive oil as a base for the sauce and finishing it with lemon zest, garlic and fresh parsley, a fresh, fragrant dish with a rich, round structure is created.
4. Veal oyster with sage and olive oil-lemon sauce
A refined dish in which the meat is briefly fried in olive oil. The sauce based on oil, lemon and sage gives the veal oyster an elegant, aromatic layer. The light bitterness of the oil supports the subtle meat character.
5. Tuna tartare with avocado, radish and olive oil
Fresh tuna and creamy avocado make a beautiful combination. The oil is used to bind the tartare and with its spicy undertone gives extra tension to the fresh fish and crunchy radish.
6. Ravioli with egg yolk and truffle, finished with olive oil
Homemade ravioli filled with a soft filling of ricotta and egg yolk. After cooking, the dish is served with a drop of truffle and generously drizzled with olive oil. This combination allows the aromatic complexity of the oil to shine.
