Description
González Byass is a family-owned winery, founded in 1835, dedicated to producing premium sherries and brandies in Jerez, Spain. Renowned brands like Tio Pepe Fino Sherry, and gems like Matusalem and Apostoles, have made González Byass one of Spain's most recognized wine brands worldwide. Tradition, research, and quality are the cornerstones of this winery, which boasts nearly two centuries of experience.
In total, there are over 10,000 hectares of vineyards in the Jerez region. The predominant Palomino grape is named after a 13th-century Spanish knight. If grown elsewhere, the Palomino grape would be susceptible to oxidation (darkening and spoiling), but the magical combination of the soil and the prevailing humidity promotes the growth of the protective flor yeast.
The Fino Tio Pepe Sherry has an exceptionally dry finish and earthy aromas. Like Port, sherry is a "fortified" wine, meaning that additional alcohol is added to bring the alcohol content to approximately 16 percent by volume. The 100% Palomino Fino is aged entirely in oak barrels. This Fino is a fresh sherry with abundant aromas and character. Enjoy chilled at 6-8°C. It makes an excellent aperitif, pairing well with nuts, olives, ham (and of course, genuine Bellota Iberico ham).

A great commercial success, the NV Tío Pepe Fino en Rama 2014 is the yearly release of a selection of 60 barrels form the Tío Pepe soleras, averaging four years under 'flor'. This is a wine that is going from strength to strength, bottled in June 2014.This is a great commercial Fino with the character and power of 'en rama' wines with the textbook esparto grass and green olive brine aromas combined with a quite subtle and an easygoing palate that is very tasty, dry and concludes with a chalky sensation. It is relatively easy to drink and is ideal with food. Each year the wine has a different label, so they are perfectly recognizable. One of these years I should do a vertical... Fortunately they've seen the potential of this wine and they filled 16,000 bottles as the initial releases were quite scarce and the wine was not so easy to find. It will be interesting to follow the evolution in bottle and to compare it with other year's releases. Something in my to-do list...
González-Byass is doing yearly releases of Tío Pepe en Rama, with a different label every year the 2014 one is a rectangular emerald blue, and Palmas collections, but the Palmas are only identifiable by the bottling date on the back label. They did a saca at the end of 2012 and this second one in October of 2014. Additionally they keep selling small quantities of old single-harvest wines, the current one is a fine Palo Cortado from 1982.

Tradition, research and quality are the pillars of this winery, which has almost two centuries of experience. According to her tradition, González Byass has developed over the past 30 years into a 'family of vineyards' in wine production in some of Spain's most famous wine producing regions, such as; Bodegas Beronia (Rioja and Rueda), Cavas Vilarnau (Barcelona), Finca Constancia (Vino de la Tierra de Castilla), Finca Moncloa (Vino de la Tierra de Cádiz) and Viñas del Vero (Somontano). In each of these regions, the family strives to produce the best quality wines possible, respecting local traditions and terroir. Likewise, the company has also expanded into the premium spirits category with brands such as The London No. 1 Gin, MOM, Druide Vodka and Nomad Outland Whiskey.
The most famous product of Gonzaal's Byass is Tío Pepe: a very good basic fino and then of course the top and that is the Tío Pepe and Rama. Unlit and has had time to mature gently and carefully.
