Winemakers Bernard and Sabine Mollard specialize in producing terroir-driven Burgundies, such as those from Saint-Aubin, Chassagne-Montrachet, and Puligny-Montrachet, in various grades. Respect for the terroir is the key word for Marc Morey. The vines are pruned for optimal yields. The soil is worked year-round. For several years, the estate has been located in Chassagne-Montrachet near Beaune in the Côte-d'Or department.

The Marc Morey Bourgogne Blanc is a particularly delightful wine, pure, fruity, and mineral on the nose and palate. The soft vanilla, butter, and nutty nuances from the malolactic fermentation and wood aging are well integrated, lending the wine extra complexity and balance. Alcoholic fermentation takes place in stainless steel tanks under strict temperature control. Subsequently, the young wine is transferred to one-year-old oak barrels where it rests on its lees until the end of malolactic fermentation, with regular bâtonnage (stirring) of the lees. This enhances the wine's mineral character and provides more structure and creaminess. After 10 months, the wine is racked, clarified, and (depending on the vintage) lightly filtered before bottling.

The Marc Morey Bourgogne Blanc has a pure, intense nose, floral and fruity, refined and mineral, with a hint of butter, vanilla, and well-integrated oak nuances. On the palate, it is quite full and firm in structure, mouth-filling, juicy, well-balanced, with a long and persistent mineral finish. A perfect, honest, and delicious Bourgogne from Morey.
