The Mercurey appellation is part of the Côte Chalonnaise vineyards and is one of the most important wine appellations in
Burgundy. It covers more than 400 hectares and was appreciated by Gabrielle d'Estrée, mistress of Henri IV. The
The name is taken from the god of trade and messenger of the gods in Roman mythology, Mercury.

Immediately after the manual harvest, the grapes are sorted, destemmed and then gently transported on a belt into the barrel, without pumping. Before fermentation, a cold maceration is carried out at 10°C for 4 to 5 days. The wine ages for 12-15 months in oak barrels, 25% of which are new oak barrels.

The Prosper Maufoux Mercurey is a 100% pinot noir and has the typical intense ruby red color with purple hues. The wine has an appealing nose with notes of small black fruit such as blackberry and dark cherry. The taste is fruity and roasted, rich with silky and elegant tannins where in the aftertaste the silky somewhat creamy finish is particularly beautiful. As we advise with many red wines but certainly with Pinot Noirs, the motto is not to drink it too warm (14-15 °) and to serve it in a large Burgundy glass .

Prosper Maufoux was founded by its name bearer in 1860 in Santenay, in the south of the Côte d'Or, where it remained in the hands of the Maufoux family for almost a century and a half in 1994. In 1860, Prosper Maufoux, a notary by profession, left his office to devote himself to his passion for wine. He founded his own house in Santenay, a Burgundian village in the south of the Côte d'Or, in the heart of the vineyards. His son Cyprien looked beyond the borders and brought Prosper Maufoux wines to the tables of England, the Netherlands, and the United States. He created a culture of openness to the world at home. The takeover in 2010 by Eric Piffaut resulted in significant investments in the winery, which resulted in a huge increase in quality. Prosper Maufoux is currently housed in the Château de Saint-Aubin, where there is plenty of room to guarantee the qualities achieved for the future. Towards the great growth in the south of the Côte de Beaune, in the heart of the Côte des Blancs, between Chassagne and Puligny, and the immediate vicinity of Montrachet.

Since 1860, Prosper Maufoux's know-how has been at the service of a wide range of appellations of great wines from the Côte de Beaune and the Côte de Nuits. Whether by regional appellations or Grand Crus, Prosper Maufoux's requirements for cultivation, grapes, vinification or maturation always tend to bring out the best in each of the terrains. The wines are aged in oak barrels whose age, origin, and toast are carefully combined and adapted to the origin of the grapes and the vintage. They rest for 12 to 18 months in the vaulted cellars; an environment most conducive to development. The care taken at every stage of production is regularly rewarded with numerous medals and awards. The exceptional vineyards of Maison Prosper Maufoux extend into the mythical terroirs of the Côte de Beaune: Saint-Aubin, Meursault, Puligny-Montrachet and Chassagne-Montrachet. The family domain also extends to the Côte de Nuits, the Côte Châlonnaise and the Mâconnais.
