Fèvre is a big name in the Chablis region. And for good reason. The name guarantees crystal clear and expressive Chardonnays, to which Chablis owes its reputation. This style is definitely reflected in the wines of Nathalie et Gilles Fèvre. The results can rightly be called an ode to the unique Kimmeridge soils.
The wines from their range are available under 2 different labels - namely under Nathalie et Gilles Fèvre (the current owners) and under Marcel et Blanche Fèvre, but these are the same wines and apply to the entire range. We prefer the Marcel et Blanche Fèvre label, but that has nothing to do with the content and is purely the label and the appearance.
The Chardonnay grapes come from the Premier Cru vineyard Fourchaume in Chablis. The soil consists of the characteristic kimmeridgian, a mixture of clay, lime and fossil shellfish. The vines are between 29 and 76 years old. Fermentation takes place at a controlled temperature in stainless steel tanks. The wine then matures on the yeast cells ('sur lie') for 12 months. This makes the wine softer and gives it extra complexity.
The Chablis Fourchaume 1er Cru 2021 has a light straw yellow color with a fragrant, chalky and malic bouquet that shows a lot of energy. We also smell citrus, green apple, peach, minerality. The palate is well balanced with a slightly honeyed attack, fine acids and a good density. Give this wine a few years in the bottle to mature, because it has a lot of potential. Delicious with oysters. Also delicious with the local specialty 'Jambon au Chablis'.

The 2021 Chablis Fourchaume 1er Cru has a perfumed, chalky, malic bouquet displaying more energy than others tasted from this climat. The palate is well-balanced with a slightly honeyed entry, fine acidity, and good density with a touch of heaviness on the finish. I'd give this a couple of years in bottle because there's promise here.

Fèvre is een grote naam in de Chablis-streek. En niet voor niets. De naam staat garant voor loepzuivere en expressieve Chardonnays, waar Chablis zijn reputatie aan te danken heeft. Deze stijl vind je absoluut terug in de wijnen van Nathalie et Gilles Fèvre. De resultaten zijn met recht een ode aan de unieke Kimmeridge-bodems te noemen.
De familie Fèvre gaat lang terug in Chablis: tot minimaal 1745. Sinds al die jaren is de familie al werkzaam in de wijnindustrie, hoewel niet altijd als landeigenaren, maar ook als kuipers of plukkers. De huidige eigenaren van het Domaine Nathalie et Gilles Fèvre zijn in elk geval wel eigenaar van in totaal ruim 40 hectare in Chablis, waarvan ook in Premier Cru- en Grand Cru-wijngaarden. Wij spreken liever over Domaine Fèvre want de wijnen zijn te verkrijgen onder 2 verschillende labels namelijk onder die van Nathalie et Gilles Fèvre en onder Marcel et Blanche Fèvre. Het gaat hier puur om de uitstraling maar de wijn is gelijk.
In 2004 werd een cuverie neergezet die er op is gericht individuele percelen te vinifiëren. Daarbij is een grote hoeveelheid kleine, temperatuurgecontroleerde vaten in gebruik genomen.
Beide Fèvres zijn oenoloog, maar Nathalie is het meest in de kelder te vinden. Ook dochter Julie is inmiddels zeer actief in het wijnhuis. De wijngaarden worden zo natuurlijk mogelijk bewerkt.
