Description
Fèvre is a big name in the Chablis region. And for good reason. The name guarantees crystal clear and expressive Chardonnays, to which Chablis owes its reputation. This style is definitely reflected in the wines of Nathalie et Gilles Fèvre. The results can rightly be called an ode to the unique Kimmeridge soils.
The wines from their range are available under 2 different labels - namely under Nathalie et Gilles Fèvre (the current owners) and under Marcel et Blanche Fèvre, but these are the same wines and apply to the entire range. We prefer the Marcel et Blanche Fèvre label, but that has nothing to do with the content and is purely the label and the appearance.
The Chardonnay grapes come from the hilly vineyards around the village of Fontenay-près-Chablis. The soil consists of the characteristic kimmeridgian, a mixture of clay, lime and fossil shellfish. The vines are between 15 and 25 years old. Fermentation takes place at a controlled temperature in stainless steel tanks. The wine then matures on the yeast cells ('sur lie') for 10 months. This makes the wine softer and gives the wine extra complexity.
In the glass, the Fèvre Chablis is lemon yellow in color with white fruit in the nose, such as peach and pear, complemented by citrus and minerality. This Fèvre Chablis is a fruity wine with lots of freshness (citrus), white fruit (peach, pear) and a long finish. Delicious with Burgundian dishes, such as ham with parsley. Also delicious with oysters.

91/100
Perswijn 16/20
Awards "Rijk, toast, bloemen, rijp citrusfruit. Mooi intens, romig, fijne structuur, lang." - Peswijn
"From the Fontenay domaine, this is another fine Chablis from the team of Nathalie and Gilles Fevre. Loads of bright acidity to balance the lovely ripeness of fruit. Balanced, focused and with great purity on the palate. Not a blockbuster but a classic style." - 91 punten, Decanter over de 2022-vintage
"The 2018 Chablis Village has a perfumed bouquet with a touch of lavender augmenting the well-defined malic aromas. The palate is well balanced with a harmonious entry, discreet tropical notes complementing the green apples and crushed stone toward the finish. Good strong aftertaste here." - 90 punten, Vinous over de 2018-vintage

Wijnhuis
