At Recaredo, the bottles are disgorged by hand without freezing the neck. Recaredo's cavas are among the pinnacle of sparkling wines, and their quality often surpasses that of well-known champagne houses. Together with Mestres, Recaredo is the master of long-aged cavas, almost without exception beating many well-known champagne brands, especially when considering price, which, in our opinion, surpasses all their French counterparts.
The Recaredo Intens is a long-aged sparkling wine that is dry, lively, and appealing, and a gastronomic delight. It is made from a mosaic of vineyards. The plots are located in the territory of Corpinnat, the birthplace of great sparkling wines in the historic Penedès wine region south of Barcelona, where sparkling wines were produced using the traditional method at the end of the 19th century.
Recaredo Intens is cultivated according to the principles of biodynamic agriculture, a step beyond organic. The biodynamic approach allows the winemaker to create wines rich in nuance, with excellent aging potential, and respecting the landscape from which they originate. The vegetation is allowed to grow spontaneously between the vines. This ground cover plays a crucial role in loosening the soil, regulating water retention and drainage (essential in a dry agricultural system), and promoting biodiversity.
The Recaredo Intense Rosat is a Brut Nature, so without added sugars, it is organic, biodynamic and vegan, and very low in sulphur. The total sulfite content is only 18 mg/l (for information: 150 mg/l is the maximum allowed by the EU for organic wines). The Recaredo Intens Rosat Brut Nature is a blend of 86% Monastrell and 14% Garnacha from two small family vineyards. The wine has been aged in the bottle for a total of 31 months (and of course with a natural cork). The wine has a deep, dark, pink color. The grapes are macerated with the skins for six hours (which explains the color) and 10% of the volume was aged in oak barrels for two months before being blended and refermented in bottle with neutral yeast; it is released after no less than three years. The delicate Grenache and the sweet Monastrell go hand in hand in this intense, dry and beautiful rosé cava from Recaredo. In the glass, the sparkling bubbles release intense red and ripe fruit with spicy notes that linger on the palate after the wine has been consumed. Taste: Fresh, dry with lovely fruit. This is a wine that improves over time.
Recaredo recommends serving this wine in a Burgundy glass, as the explosive notes need room to breathe. This is actually a beautiful wine that happens to have bubbles, and is different and incomparable to most sparkling Rosés. Since 2006, all 50 hectares of their vineyards are cultivated according to DEMETER regulations. This makes this Cava a certified organic Cava. The grapes are hand-picked and fermented separately by plot in their own cellar. They use only 40% of the must; only the first juice released after crushing is good enough for their Cava. The must ferments partly in oak and partly in steel tanks. After fermentation and blending of the still wine, the bottles are filled and corked to age for between 30 and 120 months in Recaredo's beautiful cellars. Every 14 months, the bottles are shaken and moved to agitate the yeast present in the bottle. According to Ton Mata, this promotes better flavor development. When the bottles are ready for disgorgement, they are moved to Pupitres where they are turned by hand, allowing the yeast plug to slowly sink to the neck.

ABOUT CORPINNAT
Recaredo is part of Corpinnat, which was founded in 2016 by several (high-end) producers who distanced themselves from DO Cava primarily because the CAVA model lacks distinction in quality. Corpinnat, like Cava (or Champagne), is a sparkling wine made using the traditional method, with a secondary fermentation in the bottle, creating the bubbles. It is therefore a brand name created by several quality producers who wanted to distinguish themselves. With Corpinnat as a protected brand (like a Grand Cru or Grande Reserva), not only the region but also the terroir determines the name, which encompasses much more than just the area; it also encompasses the climate, grape varieties, the vineyard, and the winery.

The 2020 Intens Rosat was produced exclusively with Monastrell (as they couldn't use the Garnacha that was lost in that year of mildew) that macerated with the skins for six hours and aged in oak barrels for a short time. It was put to referment in bottle closed with a cork with concentrated organic must and was disgorged after 31 months. This is their youngest wine, and it has an intense pink color (a little paler than in earlier vintages). But going beyond the color, it has the subtle aromas from the red grape (translucent red berries) and is a gastronomical rosé with a balanced palate and abundant small bubbles. It has 11% alcohol, a pH of 3.21 and 4.5 grams of acidity from the year of rain and mildew (and Covid!) that delivered very low yields. Very tasty. 16,000 bottles produced.
Recaredo celebrates its centenary in 2024, as it was created back in 1924 by Josep Mata Capellades using the name of his father. The second generation, Josep and Antoni Mata, consolidated the business in the 1960s, and in the 1990s, they were joined by the third generation. Unfortunately, Antoni Mata Casanovas died in November 2023, a few months before the anniversary. They are releasing a limited oenotheque range from their exceptional Turo d'en Mota single-vineyard sparkling wine disgorged after almost 25 years in bottle with the lees. Congratulations to the Mata family!
They work exceptionally well in the vineyard and in the cellar and are of one of the holders of our Green Emblem award. They are certified organic and biodynamic in their 90 hectares of vineyards and are one of the promoters of the Corpinnat quality group of producers. They are planting more and more red grapes for the production of the sparkling wines, Monastrell and Sumoll. Production is 280,000 bottles, all from their own vineyards, fermented with indigenous yeasts, matured in bottle with the lees for no less than 30 months under a cork stopper and sold with no added sugar, as brut nature. The range I tasted was really impressive, with a breathtaking super-limited release of the 2001 Turó d'en Mota.

Since 1924, Recaredo has focused on sparkling wines. Founding members of Corpinnat, the third generation of the family tends to 100 biodynamically farmed hectares and produces solely Brut Nature at their Sant Sadurní d’Anoia winery. They use select yeasts by themselves and the second fermentation is done with wine must. Their wines are laudably expressive and balanced, with a common aromatic thread that sets them apart. Of all the sparkling wines I tried in Penedès, these were the ones that most captivated me with their distinctive identity, complexity and flavor.

The Mata family of Recaredo Cava has been making high-quality cavas since 1924. Their estate is situated in the Grand Cru area for Spanish cavas: Sant Sadurni d'Anoia, Vilobi de Penedes, Subirat and Torralavit in the Alt Penedes. The third, fourth and fifth generations are currently active in the company and still produce very high quality cava. Recaredo is a winery run by a family of winegrowers who specialize in high quality brut nature sparkling wines with the distinctive character resulting from long maturation and together with Mestres they are the absolute masters of Long-aged Cavas and are Parker compared to the Tondonias among the Cavas. At Recaredo they produce unprecedented high quality wines that are aged for a very long time and are made organic / biodynamic (certified).

After fermentation and assembling of the still wine, the bottles are filled and capped with a natural cork to disappear for a period of between 30 and 120 months in the beautiful cellars of Recaredo. Every 14 months the bottles are shaken and moved to 'move' the yeast present in the bottle. According to Ton Mata, this ensures a better development of the taste. When the bottles are ready for disgorgement, they are moved to Pupitres where they are turned by hand so that the yeast plug slowly descends to the neck.
Recaredo is very committed to the Penedès region and produces in an honest way, without any artifice - great wines from its own vineyards and even since 2014 has started working exclusively with historical varieties from the Penedès region: Xarel lo, Parellada and Macabeu for sparkling whites and Garnacha and Monastrell for rosés. The Xarel·lo variety, typical of the ancient Penedès wine region, accounts for 60% of the vineyard area. The variety's long aging ability, Xarel-lo backbone and acidity make it a perfect choice for the base of our top quality sparkling wines, which with very long aging yields exceptionally fine wines.
Recaredo wines are characterized by their essentially gourmet style, a character marked by elegance and subtlety that has impressed the most discerning food and wine critics, including contributors to The New York Times, the prestigious La Revue de Vin de France, Le Monde and the influential American publication Robert Parker's Wine Advocate.
The cornerstone of Recaredo's philosophy as grape growers and winemakers is a respectful alliance between people and land. They (and we) believe that a fine wine is one that reflects the land of its birth. That is why they only make vintage sparkling wines, which means that they are wines from a specific year and not a blend of years. They also practice biodynamic agriculture, an approach that goes one step further than organic. In 2010, Recaredo was the first winemaker in the Penedès region to obtain a certification for biodynamic viticulture; and in 2013, the first winemaker in the area to be accepted as a member of La Renaissance des Appellations, a prestigious international association of biodynamic winegrowers. In the vineyard, they only intervene when absolutely necessary, always striving to maintain the balance of the ecosystem, respecting the land in order to achieve the truest expression of each vintage. At Recaredo, we always prioritize natural balances and respect for biodiversity and the environment. We work our vineyards without herbicides, insecticides or synthetic chemicals and only use organic fertilizers of natural origin, which are composted ourselves.
Long Aged Cava
Like sentries patiently waiting in silence, Recaredo's bottles remain in the darkness of the cellars for at least 30 months (two and a half years) until they take on a truly unique character. In the case of Recaredo's most exclusive family collections, some of the sparkling wines are aged for almost 30 years, preserving the delicacy of the time and a wealth of elegant and complex nuances.
