At Recaredo, the bottles are disgorged by hand without freezing the neck. Recaredo's Cavas are among the pinnacle in the field of sparkling wines and the quality in many cases exceeds the well-known champagne houses. Together with Mestres , Recaredo is the Masters in the field of Long Aged Cavas and, almost without exception, they beat many well-known champagne brands, especially when price is taken into account, because in our opinion they beat all French colleagues.
The Recaredo Intens is a 'long-aged' sparkling wine that is dry, lively and attractive and is a gastronomic stunner. The Recaredo Intens is made from a mosaic of vineyards. The plots are located in the territory of Corpinnat, birthplace of great sparkling wines in the historic wine-growing area of the Penedès south of Barcelona, where sparkling wines were made according to the traditional method at the end of the 19th century .
Recaredo Intens is grown according to the principles of biodynamic agriculture, a step further than organic. The biodynamic approach allows the winemaker to create wines that are rich in nuances, have excellent aging potential and respect the landscape from which they come. The plant cover is allowed to grow spontaneously between the tendrils. This ground cover plays a crucial role in loosening soil, regulating water retention and drainage (essential in an arid agricultural system) and promoting biodiversity.
After a number of vintages characterized by drought, people had to look more to the sky in 2018, longing for sun and drought. The rains, especially those in spring, are always exciting and especially for organic viticulture because fungi are lurking and chemicals to combat them are out of the question, so being active and continuously present in the vineyard means an exciting challenge and requires rigorous pruning and leaf removal to prevent problems with fungal diseases, such as downy mildew.
After the wet spring, the harvest took place in perfect conditions and there was clearly less harvest in terms of quantity, but in terms of quality the grapes had great purity and very good health. The average yield for Recaredo vineyards in 2018 was: 43.4 hl/ha. The upper limit set by Corpinnat is 80 hl/ha, so almost half less than what is possible, but the motto at Recaredo is: Less production, more terroir-driven and higher quality.
The Recaredo Intense Rosat is a Brut Nature, so without added sugars, it is organic, biodynamic and vegan and very low in sulfur. The total sulphite is only 18 mg/l (for information: 150 mg/l is the max. allowed by the EU for organic wines). The Recaredo Intens Rosat Brut Nature is a mix of 86% Monastrell and 14% Garnacha from two small families. vineyards. The wine has matured for a total of 30 months in the bottle (and of course with a natural cork). The wine has a deep, dark, pink color. The grapes are macerated for six hours (which explains the color) and 10 % of the volume was matured in oak barrels for two months before being blended and refermented in the bottle with neutral yeast; it is released again after no less than three years. The delicate Grenache and the sweet Monastrell go hand in hand in this intense, dry and a beautiful pink cava from Recaredo. In the glass, the sparkling bubbles release intense red and ripe fruits from the glass with spicy notes, which linger in the mouth after tasting. Fresh, dry with beautiful fruit which improves over time.
Recaredo's advice is to serve this wine in a Burgundy glass, because the explosive notes need room to breathe. This is actually more of a beautiful wine that happens to have bubbles and is different and incomparable to the majority of sparkling Rosés. Since 2006, all 50 hectares of their vineyards are cultivated according to DEMETER regulations. This makes this Cava a certified organic Cava. The grapes are picked by hand and fermented separately per plot in their own cellar. They only use 40% of the must, only the first juice that is released after crushing is good enough for their cava. The fermentation of the must takes place partly in oak and partly in a steel tank. After fermentation and assembly of the still wine, the bottles are filled and closed with a natural cork and then stored in the beautiful cellars of Recaredo for a period of between 30 and 120 months. Every 14 months the bottles are shaken and moved to 'move' the yeast present in the bottle. According to Ton Mata, this ensures better flavor development. When the bottles are ready for disgorgement, they are moved to Pupitres where they are turned by hand so that the yeast plug slowly descends to the neck.

Recaredo is part of Corpinnat, which was founded in 2016 by a number of (high-end) producers who have distanced themselves from DO Cava mainly because no distinction can be made in quality in the CAVA model. Corpinnat, just like Cava (or Champagne), is a sparkling wine that is made using the traditional method, i.e. through a second fermentation in the bottle, which creates the bubbles and is therefore a brand name founded by a number of quality producers who wanted to distinguish themselves. With Corpinnat as protected. brand (such as a Grandcru or a Grande Reserva), not only the region determines the naming, but also the terroir and that is much more than just the area; it is also about climate, grape varieties, the vineyard and the winery.

The Mata family of Recaredo Cava has been making high-quality cavas since 1924. Their estate is situated in the Grand Cru area for Spanish cavas: Sant Sadurni d'Anoia, Vilobi de Penedes, Subirat and Torralavit in the Alt Penedes. The third, fourth and fifth generations are currently active in the company and still produce very high quality cava. Recaredo is a winery run by a family of winegrowers who specialize in high quality brut nature sparkling wines with the distinctive character resulting from long maturation and together with Mestres they are the absolute masters of Long-aged Cavas and are Parker compared to the Tondonias among the Cavas. Recaredo is very committed to the Penedès region and produces in an honest way, without any artifice - great wines from its own vineyards and even since 2014 has started working exclusively with historical varieties from the Penedès region: Xarel lo, Parellada and Macabeu for sparkling whites and Garnacha and Monastrell for rosés. The Xarel·lo variety, typical of the ancient Penedès wine region, accounts for 60% of the vineyard area. The variety's long aging ability, Xarel-lo backbone and acidity make it a perfect choice for the base of our top quality sparkling wines, which with very long aging yields exceptionally fine wines.

The cornerstone of Recaredo's philosophy as grape growers and winemakers is a respectful alliance between people and land. They (and we) believe that a fine wine is one that reflects the land of its birth. That is why they only make vintage sparkling wines, which means that they are wines from a specific year and not a blend of years. They also practice biodynamic agriculture, an approach that goes one step further than organic. In 2010, Recaredo was the first winemaker in the Penedès region to obtain a certification for biodynamic viticulture; and in 2013, the first winemaker in the area to be accepted as a member of La Renaissance des Appellations, a prestigious international association of biodynamic winegrowers. In the vineyard, they only intervene when absolutely necessary, always striving to maintain the balance of the ecosystem, respecting the land in order to achieve the truest expression of each vintage. At Recaredo, we always prioritize natural balances and respect for biodiversity and the environment. We work our vineyards without herbicides, insecticides or synthetic chemicals and only use organic fertilizers of natural origin, which are composted ourselves.
