Description
This Hillside Select is considered Shafer's flagship wine. Grapes come from the Hillside Select vineyards Sunspot, John's Upper 7, Venado Ilegal, and Firebreak. Fermentation and aging take place for approximately 30-32 months in new French oak barrels of over 227 liters (Allier and Tronçais). After light filtration, the wine is bottled and matured in the cellar for at least two years before release.
The Hillside Select Cabernet Sauvignon is made from 100% Cabernet Sauvignon and boasts a deep garnet purple color. It opens with bold crème de cassis, blueberries, and cherry preserves, plus hints of smoked meat, fragrant earth, and tar, with a fragrant hint of violets and Herbes de Provence. On the palate, the Hillside is full-bodied with black fruit, supported by a solid base of firm, grainy tannins and lovely freshness, with a long finish and a seductive spicy lift.
ABOUT SHAFER VINEYARDS
Shafer Vineyards was founded in 1972 when John Shafer, after a successful career in publishing, and his son Doug purchased vineyards on the Silverado Trail in Napa Valley. They acquired 210 acres, 12 of which were planted with vines. A program of replanting and replanting was immediately implemented. From the outset, the Shafers were highly innovative. Their goal was to achieve a completely natural way of growing grapes and making wine. By growing clover and peas, among other plants, which not only prevent erosion but also form a rich humus layer, they attract bees and other insects, ensuring optimal pollination and a natural habitat. Sourced from specific blocks of estate-grown fruit, the 2019 Cabernet Sauvignon Hillside Select is another highly successful vintage. All Cabernet Sauvignon aged 32 months in 100% new French oak, it boasts intense aromas of pencil shavings, dark loam, cassis and plum on the nose, while the palate is full-bodied, super-ripe, rich, dense and concentrated—a truly impressive California vin de garde. Tannic but ripe, it finishes long and firm on the finish, adding a hint of mocha. To be released in September 2023, it's a strong showing and hopefully an indication that quality will remain high under the new ownership.

Best after 2024 and onward.

After the more vibrant 2018, Shafer's 2019 Cabernet Sauvignon Hillside Select marks a return to a richer, more voluptuous style that is so typical of the year. There is plenty of tannin too, but all the elements are so well balanced. Plush and unctuous in the glass, the 2019 opens to reveal heady scents of kirsch, blood orange, mint, lavender and rose petal. Even at this early stage, the 2019 possesses mind-blowing balance and tons of sheer appeal. The 2019 is shaping up to be magnificent.
