Description
the winery Orin Swift Cellars
Orin Swift was founded in 1998 by Dave Phinney. He discovered wine while studying in Florence and, after a harvest in Napa, definitively chose the cellar over the courtroom. This choice is reflected in the style: ripe fruit, clear structure, careful selection, and characterful blends. Since 2016, the house has been part of a larger family, with the full attention to vineyard work and quality assurance that entails. The wines are fruit-driven and generous, yet remain refined and balanced.
origin and terroir in Napa Valley
Papillon comes from several high-altitude parcels in Napa Valley. Warm days and cool nights ensure full ripeness while maintaining freshness. Volcanic soils and clay provide concentration, depth, and a distinctive spiciness. The selection of parcels creates tension and layering. Each component contributes something: strength, aromatic nuance, depth, or extra concentration.
the wine 2019 Orin Swift Papillon Red Wine
A blend of all five Bordeaux grapes. Cabernet Sauvignon 88 percent. Merlot 9 percent. Petit Verdot 1.5 percent. Malbec 1.5 percent. Alcohol 16.1 percent. The result is full-bodied, rich, and yet precise. A wine that immediately impresses yet remains elegant. Rated 92 points.
grapes, harvest, fermentation and maturation
Hand-harvested in the cool of the night. Careful selection and destemming in the winery. Each parcel ferments separately to preserve its unique character. The individual lots mature for approximately 13 to 20 months in French oak barrels, with a significant proportion of new wood. This is followed by the final blending and bottling. This approach yields depth, polished tannins, and a creamy texture without sacrificing the fruit.
color, smell and taste
Deep ruby red. The nose reveals ripe black fruit with black cherry and cassis. Layers of cedar, mocha, and dark chocolate. Subtle notes of pencil shavings, leather, and forest floor add further depth. The palate is full and open. Soft in the mid-palate with ripe plum and blackberry notes. Fine-grained tannins provide support. The fresh, juicy finish encourages the next sip. The wine cleverly conceals its high alcohol content through balance and concentration.
serving advice and storage potential
Serve at 16 to 18 degrees Celsius in a large glass. Decant for 60 minutes with young bottles. Drink between now and 2030 for optimal freshness and fruit tension. In the cellar, the wine develops more notes of cocoa, tobacco, and truffle. The profile remains juicy with a fresh finish.

A blend of all five Bordeaux varieties, the 2019 Papillon Red Wine is a full-bodied, open-knit effort marked by pronounced notes of cedar, mocha and black cherries. Soft across the mid-palate, it turns crisper on the juicy, mouthwatering finish, but it manages to nicely conceal its considerable alcohol content (labeled at 16.1%).
Winemaker Dave Phinney grew up a West LA kid and attended boarding school in Squaw Valley.
"I thought I wanted to be an attorney," he told me, as we sat down at Louis Martini to taste through his latest wines for Orin Swift. He majored in political science, interned with a public defender and a politician. "I decided I didn't want to do those," he said. While in Florence as part of his University of Arizona studies, he fell in love with wine.
Phinney interned with a professor in the agriculture department to plant a vineyard in Tucson, then after graduation sent his resume to 50 wineries in Napa and got one response—from Robert Mondavi Winery. "I worked the night shift (3 p.m. – 1 a.m.) for harvest in ‘97—the only white guy on an all-Mexican crew." In 1998, Phinney started Orin (his dad's middle name) Swift (his mother's maiden name). "I bulked out that initial vintage," he said.
"As we were growing Orin Swift, we got to a point (120,000 cases) where we were going to have to be a wine sales company," said Phinney. He sold Orin Swift to Gallo in 2016. "Now, I have to understand sales, but I don't have to deal with it. It's allowed me to spend a lot more time in the vineyards, the winery and coming up with new brands."
These are unabashedly fruit-forward and super-ripe wines, with alcohol levels that come sometimes exceed 16%. Yet they avoid coming across as hot or raisiny. In many respects, they remind me of McLaren Vale's Mollydooker wines: big, bold, and ripe, with a certain extroverted appeal.

Orin Swift
Papillon Napa Valley 2019 | $80
Fruit fans will dig this for its open and inviting display of açaí berry, plum sauce and warmed cassis aromas and flavors, all laced with melted black licorice and given a light mocha cloak on the broad, polished finish. A subtle savory tobacco element in the background adds a counterpoint, but this is aimed squarely at the hedonist crowd. Cabernet Sauvignon, Merlot, Petit Verdot, Malbec and Cabernet Franc. Drink now through 2025. 21,039 cases made.
