Domaine Anne Gros & Jean Paul Tollot is located in the Causse which is without a doubt the best part of the Minervois due to its altitude, which ranges from 200 m to almost 500 m. This results in the lowest nighttime temperatures in the Minervois and a slower thermal warming in the spring.
The La CinsO from Domaine Anne Gros & Jean-Paul Tollot comes from a 50-year-old vineyard that is 1 hectare in size, so maximum yield in the good years around 1,000 bottles - completely insufficient to meet the world wine demand for this beautiful red wine. The La CinsO is a creative naming convention to represent the grapes used for this wine - it is made from the Cinsault from ancient vines. After manual picking, the cinsault grapes are selected, destemmed and lightly bruised. After a short soaking time, the temperature-controlled alcoholic fermentation with wild (grape-specific) yeasts is allowed to take place in stainless steel tanks. About three weeks later, the grapes are pressed and the young wine is transferred to clean stainless steel tanks to undergo malolactic fermentation and mature. After 12 months, the wine is assembled and bottled without fining or filtering.
The La CinsO from Domaine Anne Gros & Jean-Paul Tollot has a deep dark purple-red color. In the nose aromas of black cherries, plums, bay leaf and a hint of dried oregano. In the taste palette notes of ripe small red-black fruit, black olives and a slightly peppery touch, which are accompanied by a soft sultry aftertaste with ripe tannins and lively acids. Delicious with grilled tuna, rabbit with candied garlic, chicken from the oven, pasta dishes, pizza, aubergine lasagna and semi-ripened goat or sheep cheese.
