Barsac
Barsac is een gemeente-appellatie ten zuiden van de stad Bordeaux. Barsac ligt iets onder Graves. Barsac is een beroemde appellatie vanwege de goudgele zoete wijnen, gemaakt van sauvignon blanc en/of semillon die pourriture noble, ofwel edele rotting, hebben ondergaan. De lokale natuurlijke omstandigheden in dit warme hoekje van de Bordeaux in de nabeiheid van water zijn, als het weer verder ook meewerkt, in principe perfect voor de botrytis cinerea-schimmel. Men laat de druiven extra lang hangen waardoor ze overrijp worden. Het vocht verdampt, de druiven verschrompelen en als ze dan ook nog aangetast worden door botrytis cinerea ondergaan de druiven de zogenaamde pourriture noble.
De beste wijnhuizen trekken meerdere keren de wijngaarden in om alleen de aangetaste druiven te plukken. De oogst betaat hierdoor soms wel uit 8-10 rondgangen (tri succesif) door de wijngaard. De eerste meestal in september en de laatste tot ver in oktober of zelfs november.
