There is Carnaroli and Carnaroli. Many types of rice are labeled 'Carnaroli', but the real Carnaroli is only grown in a few places. The Carnaroli Superfino rice from Riserva San Massimo is perfect for the preparation of risotto. It is famous among important chefs for its organoleptic characteristics such as low stickiness, firm consistency in cooking, rare grain compactness and high starch content. It is not for nothing that this Riserva San Massimo Carnaroli is the Risotto rice which is used by many Michelin star chefs and is the most used Risotto in the top catering industry in Italy, so this says something.

During the cooking process, it subtly absorbs the flavors of the various ingredients, releasing the precious starch. On the plate, this rice presents itself with compact and homogeneous grains, which even tend to become "al dente" when cooled. When you turn off the 'fire' during cooking, the rice stops cooking immediately and the grains do not run the risk of splitting due to their special structure. The excellent quality of this product is immediately noticeable, from the first bite, revealing the scent of the nature reserve. Its qualities are known to everyone, from its delicate fragrance to its very high cooking resistance, so much so that it is one of the most beloved rice by the chefs and star chefs who use it in their restaurant kitchens.

In order to guarantee high quality, production remains small-scale. Everything in the production process is done in a traditional way. For example, desiccation only takes place at a low temperature to prevent damage to the grains. The rice is hulled in small batches to ensure greater freshness. Each step contributes to the unique qualities of the rice grain. The special packaging ensures that the taste and aroma remain intact for a long time, without the use of preservatives.

The Riserva San Massimo is a nature reserve that extends over an area of more than 800 hectares. It is located in Lombardy in the Ticino Valley. Fields, moors, an unpolluted primeval forest with many fens filled with Apennine glacier water and paths with native fruit trees provide the impressive variety that this unique landscape has to offer. It is the cradle of a biodiversity in which the wild fauna has also found its ideal habitat. Thanks to the diversity of the ecosystem it hosts, the nature reserve became a Site of Community Importance (SIC) in 2004 and was subsequently declared a Special Area of Conservation (ZPS). The Riserva San Massimo represents an extremely important ecological path within the Ticino Park: it is part of the natural area in which the continuity between different habitats favors the genetic exchange between the plant species and the migration of the fauna and thus the preservation of biodiversity .

The rice of Riserva San Massimo is produced in this unique nature reserve. A Carnaroli Autentico of the highest quality, grown exclusively in the nature reserve from the best, 100% Carnaroli certified seeds. The rice received the blue label from Parco Ticino – Produzione Controllata, which identifies producers who use environmentally friendly farming techniques.
