Description
La Bota de Vinagre is a very exclusive and old sherry vinegar that comes from the famous wine region Marco de Jerez in southern Spain. This vinegar is not a standard kitchen product, but a true delicacy that has been refined by generations of craftsmanship. What makes this vinegar so unique is the extreme maturation time and the intensity of the taste.
Sherry vinegar is made by acidifying sherry wine and then maturing it for years in wooden barrels using the solera system. This is a traditional maturation method where older and younger vinegars are continuously mixed together, creating a deep complexity of flavour.
In the case of La Bota de Vinagre, however, it is an exceptionally old and concentrated vinegar that has often spent decades in a single barrel. This long maturation results in an extremely powerful vinegar with intense aromas and a rich taste.
The flavour of this vinegar is deep, complex and intensely concentrated. It has the characteristic fresh-sour notes of sherry vinegar, but also a deep umami richness, together with aromas of dried fruit, nuts and a hint of caramel. Some editions, such as the Gran Reserva al Moscatel, have a subtle sweetness from the muscatel grape, which softens the sharp acidity.
How do you use this vinegar?
Due to its extreme concentration, La Bota de Vinagre is not a vinegar that you pour liberally over a dish. Just a few drops are enough to give a dish extra depth and refinement. The best way to use this vinegar is:
In a vinaigrette: Mix a few drops with olive oil, salt and possibly mustard or honey for a perfect dressing.
As a finishing touch: Drizzle a small amount over roasted vegetables, grilled meats or even mashed potatoes for an extra In sauces and marinades: A dash in a gravy or sauce instantly adds complexity and freshness.
A rare and exclusive product
Vinegars such as La Bota de Vinagre are often used by top chefs in star restaurants because of their deep and refined flavour. They are not mass-produced, but rare and carefully selected barrels, sometimes with a circulation of only a few hundred bottles. This makes them not only a culinary treasure, but also a piece of liquid heritage from the sherry world. With La Bota de Vinagre you are not just buying a vinegar, but a piece of history and craftsmanship in a bottle.

Superb within its class, the NV La Bota de Fino Macharnudo Alto is sourced from the Inocente solera from Valdespino, a barrel-fermented, 10 year under flor Fino from the Macharnudo Alto vineyard, one of the most famous in Jerez, bottled unfiltered from a selection of butts from the Inocente solera of Valdespino, a Fino averaging 10 years of age under flor when bottled, with a strong flor character. It has a powerful nose of esparto grass, dried herbs, iodine, brine and almonds. The palate is medium to full-bodied with great power and concentration. This can be drunk now but has everything to age in bottle. 6,000 bottles were filled in July 2014.
Equipo Navazos, created in 2005 by Jesús Barquín and Eduardo Ojeda goes from strength to strength releasing unique, small lots of old rare Sherries and their regular Fino and Manzanilla that are among the best in their class. On top of that, they have joint-ventures with producers from other regions to produce sparkling wines, table wines and even small lots of very old brandy and rum that are beyond the scope of this article but are well worth pursuing. What started as a hobby with a group of hardcore fans of traditional Andalusian wines has turned into a steady business with around 30,000 bottles of wine being released per year. I keep buying and cellaring their wines as part of the initial hard core of fans for whom the private project was created.
