La Bota de Vinagre de Jerez Gran Reserva al Moscatel “Bota NO 26” is a unique and exceptional barrel of very old muscatel vinegar, one of the rare treasures preserved with great care by Páez Morilla. This vinegar is extremely special because it comes from muscatel grapes and has undergone a maturation that extends over almost fifty years : first almost twenty years as a wine, followed by several decades as a vinegar.
To maintain exclusivity, only a third of the cask’s contents were bottled, resulting in just 600 bottles – each a masterpiece of craftsmanship. This product is the result of generations of knowledge and expertise within Marco de Jerez, and has an unparalleled personality and intensity.
The enormous concentration of this vinegar is somewhat softened by a subtle sweetness, which comes from the original muscatel grapes and the natural concentration during maturation. This makes it more accessible than, for example, La Bota de Vinagre 106, an earlier edition of an also very old vinegar, but with an even more intense sharpness.
It took years for this special cask to be ready for bottling. As with previous editions, the availability of this exclusive and precious product was largely made possible by the interest of some of the most prestigious restaurants in Manhattan, Paris and London. Normally, such old vinegars are mixed with younger vinegars to give them more depth and character. But this edition has been bottled pure, without any dilution, which is exceptional for a vinegar of this age and quality.
How to use
This spectacular vinegar is perfect for perfuming dishes with just a few drops. Due to its intense flavour, it is recommended to use only a minimal amount, preferably with a pipette. Instead of adding the vinegar directly to a dish, it is better to make a vinaigrette by mixing it with oil, salt and other ingredients to taste. This will ensure a better balance and harmony in the taste experience.

Superb within its class, the NV La Bota de Fino Macharnudo Alto is sourced from the Inocente solera from Valdespino, a barrel-fermented, 10 year under flor Fino from the Macharnudo Alto vineyard, one of the most famous in Jerez, bottled unfiltered from a selection of butts from the Inocente solera of Valdespino, a Fino averaging 10 years of age under flor when bottled, with a strong flor character. It has a powerful nose of esparto grass, dried herbs, iodine, brine and almonds. The palate is medium to full-bodied with great power and concentration. This can be drunk now but has everything to age in bottle. 6,000 bottles were filled in July 2014.
Equipo Navazos, created in 2005 by Jesús Barquín and Eduardo Ojeda goes from strength to strength releasing unique, small lots of old rare Sherries and their regular Fino and Manzanilla that are among the best in their class. On top of that, they have joint-ventures with producers from other regions to produce sparkling wines, table wines and even small lots of very old brandy and rum that are beyond the scope of this article but are well worth pursuing. What started as a hobby with a group of hardcore fans of traditional Andalusian wines has turned into a steady business with around 30,000 bottles of wine being released per year. I keep buying and cellaring their wines as part of the initial hard core of fans for whom the private project was created.
