One of them is Marc Alvarez, who has held a top position in the El Bulli group for years. The 3 have worked on Bonanto for 3 years, both in terms of content and appearance. They went looking for a quality aperitif and ended up with a wine-based aperitif to which a distillate of cherries was added. It can be drunk on the rocks during the day, with cava replacing Aperol Spritz, with tonic or soda the way Campari is served.
