Since he took over the domaine from his father Philippe in 2000, quality has visibly continued to rise. With great respect for the terroir, he works with low yields, careful vineyard management, and a style centered on purity and precision. Modern techniques are combined with traditional methods, including fermentation in wood and long aging on the lees to build texture and complexity.

For this Bourgogne Chardonnay, Ballot-Millot works with grapes sourced from carefully selected plots around Meursault. As a result, the wine benefits from a remarkably high level of quality for the appellation. Fermentation takes place partly in oak barrels, followed by aging in which the wood is deliberately used subtly. The goal is clear: to preserve freshness, fruit, and terroir, without the wood dominating.

The young Charles Ballot took over the domaine from his father Philippe in 2000. His estate consists of about 30 hectares. Mainly Chardonnay from the best terroirs from Meursault and Chassagne Montrachet, but also Pinot Noir from Pommard, Volnay and Chassagne. Charles Ballot is now one of the very best in his region.

Tradition and innovation are the key words here. Charles respects 'terroir', prunes for lower yields and cherishes his old vines. He also invests in modern techniques and materials to ensure the very best quality. He works according to traditional culture, such as complete fermentation on wood and low yields. In the wine cellar, he opts for a soft, slow pressing and a slow vinification. All his wines are fully fermented and aged in oak for 12 months. For the most part, he uses old barrels of 1 or 2 years. The road to full organic cultivation has now begun.
