The wine is deep ruby red in color. It has a broad aroma, with cherries and cassis, berries, and a hint of paprika, supported by a pleasantly spicy oak and vanilla note. The palate is fresh and quite powerful, with blackcurrant notes, delicious vanilla, a hint of leather and bay leaf. Elegant and fresh, it offers a firmness, acidity, bitterness, cherries, and currants. Ideal with grilled red meat, but also delicious with lamb chops or mature cheeses.

The roots of the Spier estate go back to the early years of the Cape colony, in 1692. That year, the original farm in Stellenbosch was founded by the German colonist Arnout Janz. He was also the one who realized that the soil was exceptionally suitable for viticulture and planted the first vines. The first grapes were pressed, and the old cellar, built in 1767, is one of the oldest wine buildings in the Cape. It remains the proud property of the estate. Today, Spier is one of South Africa's most innovative wineries, with a cellar that has been modernized and expanded in recent years to realize its ambitious goals. The expansion of the vineyard area, now under the full control of a large team of experienced and talented winemakers, led by Chief Winemaker, Frans Smit, should be seen in the same light.

Cabernet Sauvignon requires a slightly warmer climate than Merlot, and slightly poorer soil, to allow the grapes to ripen properly. Otherwise, the foliage grows primarily, and the grapes don't ripen sufficiently. With Cabernet Sauvignon, proper ripening is only possible with good daytime warmth combined with nighttime freshness, especially in the autumn, before harvest. The grapes are sourced from various vineyards, from which a blend with many nuances is created. After a cold maceration to give the wine fruit and color, it is fermented at a low temperature, 24°C, again to enhance the fruit. During fermentation, the wine is regularly pumped over the skins to enhance its color and develop ripe tannins. The wine is rounded out by aging 20% of its wine in French oak barrels for approximately 8 to 10 months, depending on the vintage. This creates greater depth and complexity. The rest of the wine is aged in stainless steel with French oak staves, which give it some additional woody aromas. This maintains the perfect balance between wood and fruit.

Frans Smit wants to make wines with depth, but also with an emphasis on the fruit. By making different series, the different types of wine lovers can enjoy the wines of this company. The wines under the label 'Discovery' and 'Colors' are for the wine drinkers who like to drink a smooth wine, with a lot of emphasis on the fruit. The terroir is particularly emphasized with the wines in the Private Collection. In recent years, millions have been invested in the winery to release it and to fully adapt it to the requirements of modern winemaking. In the air-conditioned cellars there are 4,500 barrels for maturing the wines.

Winemaking is an art according to the winemakers of Spier. The grapes for the Classic Range grow in specially selected vineyards, picked at optimal maturity and vinified in such a way that all characteristics of the wines are well preserved. Light wood maturation provides an elegant background alongside the fruit notes. The grapes of the Private Collection wines are hand selected in the old, single variety vineyards. After vinification, the wines are aged in French oak barrels. Only then will the final selection of the wines take place, because only the best wines may carry the designation 'Private Collection'.
