Beautiful powerful, dry red wine made from Cabernet Sauvignon grapes from the beautiful plots of winery De Wetshof from South Africa. The wine has a beautiful ruby red color and the nose has the aromas of delicious sweet plums and a light spiciness, currants, berries, raspberries, open and pleasantly sultry. The taste is nice and firm and beautifully soft at the same time, smooth and fruity, raspberries and cherries, with a slight firmness after. The wine has a fresh and quite powerful attack, with black currants, delicious vanilla, a touch of leather and tobacco, elegant and fresh, firmness, fine acidity. Powerful, dry red wine. Cherry and cassis, berries, pleasantly spicy notes of oak and vanilla, caramel and ripe plums.
This Cabernet Sauvignon goes very well with pasta with braised lamb shank, lamb tenderloin with Provencal herbs, entrecote from the grill and lamb chops. Also delicious with matured cheeses.
The Cabernet needs a slightly warmer climate than the Merlot, and a soil that is slightly poorer, to allow the grapes to ripen properly. Otherwise, it is mainly the leaves that will grow, and the grapes will not ripen sufficiently. With Cabernet Sauvignon, good ripening of the grapes is only possible through good warmth during the day, in combination with freshness at night, especially in the autumn, in the period before the harvest. The grapes come from different vineyards, from which a blend is composed with many shades. After a cold soak, to give the wine fruit and color, it ferments at a low temperature, at 24°C, again for the fruit. During fermentation, the wine is regularly pumped over the skins to give it more color and ripe tannins. The wine is rounded off by maturing 20% in French oak barrels for about 8 to 10 months, depending on the vintage. This provides more depth and complexity. The rest of the wine is aged in stainless steel with bars of French oak, which give it some extra wood aroma. Wood and fruit remain in perfect balance.
