A beautiful, powerful, dry red wine made from Cabernet Sauvignon grapes from the beautiful plots of the De Wetshof winery in South Africa. The wine has a beautiful ruby red color and, on the nose, aromas of delicious sweet plums and a light spice, currants, berries, and raspberries—open and pleasantly sultry. The palate is both pleasantly firm and beautifully soft, smooth and fruity, with raspberries and cherries, followed by a slight firmness. The wine has a fresh and quite powerful attack, with blackcurrant, delicious vanilla, a hint of leather and tobacco, elegant and fresh, firm, and fine acidity. A powerful, dry red wine. Cherries and cassis, berries, pleasantly spicy notes of oak and vanilla, caramel, and ripe plums.

This Cabernet Sauvignon pairs beautifully with pasta and braised lamb shanks, lamb tenderloin with herbs of Provence, grilled sirloin steak, and lamb chops. It's also delicious with aged cheeses.

Cabernet Sauvignon requires a slightly warmer climate than Merlot, and slightly poorer soil, to allow the grapes to ripen properly. Otherwise, the foliage grows primarily, and the grapes don't ripen sufficiently. With Cabernet Sauvignon, proper ripening is only possible with good daytime warmth combined with nighttime freshness, especially in the autumn, before harvest. The grapes are sourced from various vineyards, from which a blend with many nuances is created. After a cold maceration to give the wine fruit and color, it is fermented at a low temperature, 24°C, again to enhance the fruit. During fermentation, the wine is regularly pumped over the skins to enhance its color and develop ripe tannins. The wine is finished by aging 20% of its wine in French oak barrels for approximately 8 to 10 months, depending on the vintage. This creates greater depth and complexity. The rest of the wine is aged in stainless steel with French oak staves, which give it some additional woody aromas. This maintains the perfect balance between wood and fruit.

De Wetshof has a state-of-the-art cellar that is computer-controlled and uses gravity techniques. There is also a spectacular cellar that houses the best oak barrels, where the beautiful wines can mature.
Danie de Wet experiments a lot with new techniques to further improve the quality of the grapes. He is participating in a weather station project and is investigating the water evaporation in the soil of the vineyards and from the vine leaves of the vines. De Wetshof specializes in making Chardonnay. Danie's beautiful creations have inspiring names such as Bon Vallon, Lesca and d'Honneur
