Hospices de Beaune is a centuries-old winery that has been producing wine since 1443. The proceeds from their annual wine auction benefit the historic hospital in Beaune. For each auction, the wines are vinified by various top Burgundy estates and winemakers. The 2019 Cuvée Baudot de Meursault-Genevrières was entrusted to Pierre-Yves Colin-Morey, a name synonymous with precision and purity in white Burgundy.
Colin-Morey, descended from a prominent Meursault family, founded his own estate in 2005 after years of experience at his family business, Domaine Marc Colin. His wines are known for their high density, crisp acidity, and a texture that combines power and finesse. He works with minimal intervention, natural yeasts, and meticulous oak aging. This approach emphasizes the purity of the terroir and the character of the vintage.
Location and terroir
The Premier Cru Genevrières vineyard, located south of the village of Meursault, is among the appellation's most prestigious. The east-facing slopes consist of calcareous clay with abundant stones, ensuring ideal drainage and perfect grape ripening. The combination of sun, altitude, and soil structure produces wines with tension, ripe fruit, and pronounced minerality. The Cuvée Baudot also benefits from old vines that contribute to its concentration and complexity.

This wine is 100% Chardonnay. The 2019 vintage was warm and sunny, but with enough cool nights to maintain freshness and balance. The grapes reached perfect phenolic ripeness and were harvested entirely by hand. Yields were low, resulting in concentrated fruit with pure aromas and a firm structure.
Vinification and maturation by Pierre-Yves Colin-Morey
Colin-Morey's vinification was carried out with respect for the terroir. The grapes were gently pressed, and the must was transferred directly, without fining, to French oak barrels, a limited portion of which were new. The wine was aged on the fine lees, without bâtonnage, to preserve the natural texture and prevent oxidation. This method creates tension, precision, and layering. The wine was bottled unfiltered to preserve its pure character.

The wine has a bright gold color with green nuances. The nose reveals notes of white peach, ripe pear, roasted hazelnut, and subtle floral aromas. The oak is discreetly integrated, supporting the fruit without being overpowering. On the palate, the wine combines a creamy attack with lively acidity and a refined minerality.
