The year 980 is the first year where the first observation of wine making at Villa Saletta has been found. A whole history behind a winery, that is why they make their wines completely traditionally. Since 2000 the winery is in the hands of Guy and Julia Hands.

Only perfect berries are used, using small new barrels of Allier French oak with integral fermentation. Perlè barrels are also used, which create a 'redox atmosphere'. This reduces the amount of oxygen the grapes are exposed to, allowing the first drops of wine to develop slowly on the skins. This preserves freshness and aroma while extracting colour and roundness for an elegant and supple soft tannic structure.

All wines are given a full malolactic fermentation in new French oak barrels. This converts the sharp acidity into softer, more buttery flavours. They are one of the few Italian companies to do this full (and expensive) malolactic fermentation in new oak and is a technique more associated with (top) Bordeaux wines.

The story of Villa Saletta Chiave di Saletta begins with delicate vineyard work: defoliation, crop thinning and manual selection of branches. Villa Saletta’s aim is to create a wine full of varietal personality. The Chiave is a blend of Sangiovese (50%), Cabernet Franc (20%), Cabernet Sauvignon (20%), Merlot (10%) – a true Super Tuscan. The varietals are fermented individually and aged for 14 months, 40% in new barrels, 30% in one-year-old barrels and 30% in two-year-old barrels. After maturation, the different varietals are meticulously blended to create a fresh and fragrant wine with full colours and supple, elegant textures and tannins. After bottling, the wine is given a considerable period of bottle ageing before we can enjoy it.

The nose of Chiave di Saletta is intense red in colour and shows powerful and penetrating notes of berries and dark chocolate. Balsamic notes and spicy sensations are attributed to the oak barrels. The taste is smooth and has soft, velvety tannins. This is an elegant wine with a fine length and persistence, and a finish and aftertaste that recall mint, tobacco and chocolate.
