Description
2007 Castello di Ama Chianti Classico Castello di Ama Jeroboam
The 2007 Castello di Ama Chianti Classico in Jeroboam format is a special wine for lovers of Tuscan elegance. This 3-liter bottle demonstrates how a Chianti Classico can develop with age. Wine of this age is a natural product: each bottle reacts differently to time and storage, making each tasting a new experience.
the Castello di Ama winery
Castello di Ama is located in the heart of Chianti Classico, Tuscany. The estate comprises approximately 80 hectares of vineyards, primarily planted with Sangiovese and small amounts of Merlot and Malvasia Nera. The vineyards are situated on chalky and clayey soils, giving the wines both structure and elegance. The estate combines modern vinification with respect for the natural growth of the grapes, ensuring that each vintage reveals the terroir and vintage characteristics. Castello di Ama is internationally recognized as a benchmark producer in Tuscany, with wines that are rich, powerful, and refined.
tastings of 2007 Castello di Ama
Pouring this Jeroboam wine immediately reveals its deep ruby red color. The nose opens with layers of ripe red fruit like cherries and raspberries, followed by notes of spice, tobacco, cedar, and a subtle hint of rose. The palate is silky and elegant, with a long, harmonious finish. The tannins are rounded and well-integrated, giving the wine a smooth, supple finish. The wine comes in a beautiful OWC/1 case.
The Wine Advocate awards this vintage 93 points, with an assessment by Antonio Galloni. He calls the wine "fabulous" and emphasizes the endless layers of dark red fruit, its precision, elegance, and harmony. Galloni points out that the wine is already exceptionally silky, but that the aromas and flavors can still develop further into tertiary nuances. The recommended drinking period is 2015-2027 for a standard 0.75-liter bottle, indicating that this Chianti Classico is still evolving, making every sip unique. What makes it even more unique is that this is a double magnum. This is even more delicious and has an even longer expected drinking window.
wine and food pairings
This 2007 Chianti Classico pairs perfectly with Tuscan meat dishes like game, lamb, and stews, as well as aged cheeses or mushroom dishes. Thanks to its fresh acidity and round tannins, the wine remains versatile at the table. Each sip reveals new nuances, making a meal a true experience.
wine as a natural product
The 2007 Castello di Ama perfectly illustrates that wine is a natural product. The weather, the soil, and the grape itself influence each bottle. Even now, fifteen years later, it remains exciting to see how this Jeroboam continues to develop. The large bottle size contributes to a slow evolution, gradually increasing its complexity. Tasting it, therefore, becomes a new discovery every time.
maturation and storage
This Chianti Classico can age for several more years. Grand Cru wines store the wine in a climate-controlled wine warehouse, where the temperature and humidity are optimal for long-term storage. This keeps the bottle in top condition and ready to be opened at the right time. Decanting is recommended to fully develop the aromas, especially with a large bottle like a Jeroboam.

The 2007 Chianti Classico Castello di Ama is fabulous. There is so much going on in the glass, as endless layers of perfumed dark red fruit caress the palate in stunning style. The wine’s precision, elegance and overall sense of harmony are all first class. Smoke, tar and roses add the final layers of complexity on the finish. Today the wine is mostly remarkable for its exceptional silkiness; readers will have to wait at least a few years for the aromatics and flavors to develop tertiary nuances. The Castello is a wine that sets a new standard for what is possible within the Chianti Classico appellation. Anticipated maturity: 2015-2027.
Castello di Ama remains a reference-point producer in Tuscany. My visit to the property last year culminated with the stunning 1988 Apparita, still in great shape after all these years. The house style seeks a rich, bold expression of fruit that requires significant bottle aging to reach its apogee, even if the wines can be very showy when young. Make no mistake about it, these are some the most pedigreed wines being made anywhere.

The winery of this small hamlet of the same name is the cradle of an important research into the right sangiovese clone for chianti. Winemaker Marco Palanti was looking for the best clones for Ama in his own way and his life's work is astonishing to say the least. Where chianti used to struggle with an image of diluted wine, Castello di Ama was able to turn this image into that of high-quality wines in less than one generation. Not only the vineyards were looked at, but also the possibilities of pruning, the ripening of the grapes and of course also the improvement potential in the winery. Over the years it has been possible to improve the clones step by step. The vineyards are located at an altitude between 390 and 450 meters. The soil is heavy clay with a lot of gravel and pebbles. The vineyards were planted between 1964 and 1978. At Castello Di Ama you do not only get art in the glass, because in and around the authentic villa there are sublime works by great contemporary artists.
