Giannikos Winery - Domaine Nicolas

In the charming medieval village of Nolay, six generations of the Nicolas family have succeeded one another. In the fifties they grew vines, cows and grain crops on our land. Bernard Nicolas started developing the estate and in the 1970s he decided to focus entirely on the vines in Cirey les Nolay. He had 6 hectares and sold his grapes to the Hautes Cotes a Beaune cooperative. His son Alain, who had training and experience in winemaking techniques, joined Bernard in the 1980s.

In 1992, Alain changed the direction of the estate, stopped selling grapes to the cooperative and started selling the wine produced and bottled on the estate. He switched to sustainable wine production, using traditional growing and winemaking methods. Today, the estate has more than 18 hectares, mainly Hautes Côtes de Beaune, but also Santenay and Saint Romain. In 2019, Mylene and Benoit became official partners of their father. Mylene has studied the business side of winemaking and Benoit has a degree in oenology, and this combination allows the estate to take a new dynamic direction, full of ambition and with many new plans.

They have 18 hectares of low-growing vines (10,000 plants per hectare). The vines are 70% Pinot Noir, 25% Chardonnay and 5% Aligote. Most of the wines are in Nolay, producing both red and white in the Hautes Côtes de Beaune appellation. This appellation represents approximately 16 hectares. Located under the rock walls of Cirey, these vines take advantage of their south-facing position. they adopt traditional cultivation methods, using sustainable practices of preventive treatments and mechanical weeding. They do not use insecticides, anti-rot treatments or herbicides. All this care allows us to produce high quality grapes.

Giannikos Winery bezit 8 ha wijnstokken op twee locaties, één in Korinthe rond de wijnmakerij en de andere in Mycene, nabij de beroemde archeologische vindplaats en geboorteplaats van de Griekse wijnbouw bijna 4000 jaar geleden. Beide wijngaarden worden strikt biologisch geteeld omdat men ervan overtuigd is dat alleen natuurlijk geteelde wijnstokken gezonde druiven kunnen produceren die de basis vormen van hun kwaliteitswijnen. Een ander belangrijk aspect is de invloed van de zee op het microklimaat. De verkoelende winden zorgen samen met de mediterrane zon en de bodem voor de beste omstandigheden en zijn de redenen dat Giannikos Winery internationaal inmiddels al zeer gewild en bekend is maar gezien de kleine productie. Griekenland heeft een rijk erfgoed van inheemse druivensoorten en bij Giannikos Winery heeft men als filosofie om de traditie en nieuwe technologie te verenigen. Daarom teelt men biologisch en oogsten en snoeien men zorgvuldig met de hand. In de wijnmakerij gebruiken ze moderne stalen tanks, ultramoderne machines en Franse eiken vaten van geselecteerde fabrikanten.
