L'Olivella was founded in 1986, thanks to the inspiration of an expert winegrower from Puglia, Mr. Umberto Notarnicola, and a meticulous wine connoisseur from Piedmont, Mr. Bruno Violo, both in love with the landscape of Latium. It is a young, dynamic farm, which is constantly innovating itself but maintaining strong links with the local culture and traditions.

The hills, where the Frascati vines grow, are of volcanic origin, rich in mineral salts (potassium, phosphorus, calcium and magnesium) and low in nitrogen.
The ideal mix for growing vines and producing wines of high organoleptic quality. L'Olivella is located between Monteporzio and Frascati, in the hills around Rome, a few kilometers to the south, along the via Tuscolana. It is easily accessible from the Rome-Naples motorway, leaving the motorway at the Monteporzio Catone interchange. Frascati has always been the wine of Rome, with the longest historical traditions: the ancient Romans appreciated the wine of Tuscolo, the hill above Frascati, a natural terrace overlooking the capital.

Pope Paul III (1534 - 1549) before he became Pope, as Bishop of Frascati, made this wine, Frascati, always present on the Pope's table. Goethe, the famous German writer, defined it as "a paradise" during his stay in Rome in 1816.
