In the past sour cherry wine was used to make robust and tannic wines more pleasant and to prevent oxidation, because sulphites were not available in the past centuries. Duke Federico da Montefeltro, according to his trusted biographer and librarian Vespasiano da Bisticci, "quasi non beveva vino se non de cirunion o de granate" (drank almost no wine except cherries or sour cherry wine). Later this wine was considered a wine for women, suitable to pay homage to the fair sex with its aromas, softness and roundness. Nowadays, cherry wine is considered a wine for meditation. The wine is also called "Visciolato" or, more often, "vino di Visciole" (sour cherry wine).

The tradition of aromatizing wine in the Marche region is an ancient tradition that dates back to the Middle Ages where the nobles of Vino di Visciole drank and still this unique and especially blissful wine is produced in the Marche n very small amount. The production area is the area of ​​the municipalities of Candiano and Pergola, near Pesaro and Castelli di Jesi, near Ancona. The recipes for this wine vary considerably from place to place, from winery to winery. The basic ingredient for vino di visciole is the sour cherry (Visciola) and the most beautiful comes from an old wild cherry species (Prunus cerasus) which is a deep dark red and slightly sour cherry.

According to the traditional recipe, sour cherries are harvested and soaked in sugar to produce a delicate and aromatic syrup. This syrup is then filtered and finally mixed with a nice wine and at Velenosi they use their showpiece - wine from the Lacrima grape. The sugars in the syrup make it possible to start a second fermentation process so that the two different identities combine (wine and syrup). Fermentation is stopped - by lowering the temperature - when it has about 14% alcohol and this results in about 80 grams of residual sugar per liter (so sweet but clearly less sweet than, for example, a dessert wine or a full sweet wine).

The Visciola Vino is intense and deep ruby ​​red in the glass with surprisingly complex, sensual and intense in the nose, it has aromas of blackberry, ripe wild berries, plums, dried plums and scents of red fruit. It also shows many spices from cinnamon to nutmeg and naturally cherries.
On the palate, the wine is creamy, full-bodied with a very good acidity, elegant and well-balanced. An enchanting wine that you must sip and enjoy. It is perfect with every dessert made with chocolate and cakes with dark berries. But give this to blue cheeses - the combination is so great. Also excellent to add a (fair) cherry twist to your cocktails, but also great with a good conversation or chilled as a digestif to end a meal.
