The Non vintage Palo Cortado VORS is light to medium brown colored copper and slightly cloudy. This delicious 30 year old sherry has a perfumed nose of old wood, pecan nuts, hazelnuts and a hint of toffee. The pungent taste is intensely dry with a slightly bitter taste reminiscent of dark chocolate. This very complex sherry has numerous layers, including hazelnut, ending with a mineral somewhat salty aftertaste. Unique in its kind and has not been awarded 94 Parker points for nothing. The Paolo Cortado VORS can best be summarized as a top sherry with a soft nose but fierce on the palate. Serve this sherry at 14 degrees and it is an ideal accompaniment to dishes with mushrooms, artichokes, anchovies and cheeses.

The impressive bodega complex of Emilio Lustau (since 1896) is located in the heart of Jerez, the proud capital of the sherry area in Andalusia. The city is actually called Jerez de la Frontera, because it has long been on the border of a Moorish and Christian sphere of influence. What makes Lustau sherries so special? In addition to the large bodegas, the sherry region has the so-called almacenistas, 'stockholders' of small quantities of special sherry. The bodega of Lustau contains more than 20,000 barrels, a monumental wine cellar with beautiful sherries.
Manuel Lozano is the capataz (cellar master) of Lustau. He knows how the special character of sherry arises. Lozano: "Our sherries are the result of a careful selection of the best wines that are fortified with wine alcohol and then undergo a delicate maturing process in the solera." In addition to the standard series (fino, medium dry and oloroso), the fantastic Lustau Reserva sherries ripen in Lustau's bodega. And in Lustau's treasury, the famous almacenista wines are cherished: small quantities of special topherries with a unique taste. They come from small, traditional bodegas where the art of aging old sherries has been passed down from father to son for generations. The average age of these jewels ranges from 30 to 60 years.
