Domaine du Bois Joly is a family estate with 30 hectares of vines between 30 and 60 years old. It is located in Pallet, 20 kilometers southeast of Nantes in the heart of Sèvre and Maine. They work with respect for nature and the wine is certified organic (Certified High Environmental Value III level, or Environment Management System).

The Olympe Brut is the flagship of Bois Joly. Made according to Méthode traditionnelle, so with a double fermentation and exactly as a champagne is made. The Olympe Blanc consists of almost 100% chardonnay with an addition of autochthonous grape varieties. Bois Joly has an old field vineyard with many grape varieties mixed together. This mix of grape varieties in 1 vineyard is currently very popular again because the diversity ensures a healthy vineyard, but also ensures that the right mix can be made because of the different ripening moments. So, for example, one can nicely blend an aromatic or ripe grape with a grape that is even more just ripe and thus get a much better balance in the wine. Currently Telmo Rodriguez is a good example, with his 100 Parker points of wines, he proves that this method (which was quite normal in the past) leads to great wines. The organically cultivated vineyard is located on a schist soil and gives the Olympe a nice extra minerality as an encore. The grapes have matured for 12-16 months in used oak barrels and are fermented on their natural yeasts (spontaneous fermentation) so the chemistry box is not used here and the wine is then, like all Bois Joly wines, made completely organic.

The Olympe Brut is very pale in the glass with a very fine elegant perlage. The wine is very expressive with fruity and harmonious aromas. The taste, strong and smooth at the same time, leaves a feeling of fullness that makes it very glamorous. This "Loire champagne" is extremely complex with many layers. First some yeast notes and a mineral touch, then some light tropical white fruit which turns into a bit of brioche and then the mineral touch returns in the aftertaste. This 'Loire-Champagne' is truly a jewel and costs a fraction of what a good champagne costs and is an absolute must for festive moments but also great as an aperitif, a fruit du mer but also delicious with a chocolate dessert.

Domaine du Bois Joly is located in the Loire-Atlantique, Pays de la Loire region. The domain of Bois Joly is located in the heart of the Sèvre et Maine-et-Loire appellation in the Muscatdet. The village of "Le Pallet" the cradle of the winery. This small town, with just over 3,000 inhabitants, is crossed by two rocky veins, each of which has a special influence on the vines they cover. The 'White Rocks', composed of gneiss and other schists, form the basis of so-called "tender" wines with great flexibility, for young enjoyment. And the "Black Rocks" composed of the famous "gabbro" support the long-aged wines, which are structured and excellent to store.

Domaine du Bois Joly extends over 30 hectares of vines and benefits from its proximity to the Sèvre and Maine rivers, hence the name, embellished with the La Sanguèze River. In addition, the vineyards benefit from the influence of a maritime climate. These elements make this area very moderate. Drought and frost are less common.

Since 2013, Domaine du Bois Joly is one of the 100 farms distinguished by the 'Haut Valeur Environnementale' certification. The Domaine received this certificate as a result of long-term environmental efforts. From the outset, they work with great dedication and respect for the environment. The winery is simple and natural, and of course is proud of this official recognition.

The beautiful wines of Domaine du Bois Joly are the result of their balanced and respectful handling of the vines. They take care of the vines every day to ensure their optimal flowering. Attentive care and a lot of patience are needed to produce authentic wines in this way, with respect and respect for the environment. The winery states: "The landscape is the origin of the wine.
