Vermouth or in the Spanish Vermut. This Vermut is from the beautiful house Cillar de Silos. It is a mature, full but fresh vermouth made from overripe tempranillo grapes located in the Ribera del Duero (Quintana del Pidio - Burgos - Spain). The "Old Vines" has matured in oak barrels. It has a mahogany color with light orange hues. The wine has harmonized an intense nose with elegant notes of spices. On the palate, the Golfo has a nice freshness and maturity, which is mainly due to the high and northern vineyards in the Duero.

Delicious in the mix with a delicious cava (1/3 golfo, 1/3 sparkling water and 1/3 Cava or 2/3 Cava and 1/3 Golfo). Delicious with Tortillas

Cillar de Silos winery is located in the Spanish municipality of Quintana del Pidio which belongs to the region of Castile and León and now has 68 hectares. The winery was officially founded by Amalio Aragón who started in 1994 with his children. However, his ultimate dream of producing wines from his own village of Quintana del Pidio had already taken shape when Amalio purchased some small parcels from local winegrowers in 1970. When he decided to start his own winery, he named it Cillar de Silos, after the monk who used to lead the Silos monastery.

Today the winery is still a family business. Son Roberto is a Manager and is responsible for sales. Son Óscar has studied wine science and is the technical director responsible for viticulture and vinification. And daughter Amelia is passionate about exporting the wines all over the world. In short, a family that is proud of its beautiful vineyards and who works passionately on the estate, which is an excellent breeding ground for the world famous Tempranillo grape variety.

Cillar de Silos winery has an underground wine cellar. This dates back to the 17th century and has a natural humidity and a constant temperature between 11.5 and 12 ° C during the year. A unique and ideal location for the wines in the final stage of the bottle maturing process.

The vines are planted on slopes and surrounded by forests with excellent drainage. The surrounding forests protect the vines from the dangerous winter frosts and the cold winds from the north.
