André Clouet founded the champagne house in 1741. Today, Jean-François Clouet is responsible for 7 hectares of vineyards, located in the Grand Cru villages of Bouzy and Ambonnay. His Grand Cru vineyards are mainly planted with Pinot Noir vines. All his champagnes mature for at least 4 years in the underground cellars before being released on the market. Jean-François works completely naturally through, among other things, manual harvesting, no irrigation, as few pesticides as possible, different plants and grasses between the vineyards to promote biodiversity and he uses recycled materials for packaging. The famous cult wine the Bouzy Grand Cru Le Clos is the wine that he only releases in the top years and only when the wine is in perfect condition, which also means that a newer (warmer) year comes onto the market earlier than a cool year.

The pinot noir grapes for the André Clouet Un Jour de 1911 come from a vineyard that was planted in 1911. Every year, 1911 bottles of different vintages are produced, so this explains the name of this beautiful champagne from Clouet. The grapes are pressed in a traditional press and undergo alcoholic and malolactic fermentation at 16-18°C. The champagne is stabilized cold and then matures on its lees for six years. Remuage and disgorgement is done manually.

This Un Jour de 1911 from André Clouet is a rich and expansive champagne with many ripe aromas of dried fruit (apricots!) and candied orange. The style is ripe and has a slightly oxidative character with typical characteristics of nuts, brioche bread and toast. Lots of textural complexity on the palate and a long, chalky finish that just keeps giving and giving. Un Jour de 1911 is ideal to serve with dishes with pheasant, guinea fowl, veal sweetbreads or cheese.
