At least 8 years in Limousin oak barrels. The various types of Paul Giraud cognac are now significantly older and ripen longer than the minimum required by law. The Giraud family has been growing its grapes since 1650 in the best part of the cognac region, the Grande Champagne. The harvest is done manually. Mono crus, one vineyard, one harvest year. No caramel or tannin is added. The house works organically but is not certified due to the old stocks that are still used in all cognac.
