Extremely high quality - this is how Luis Gutiérrez from the Wine avocate describes this Palo Cortoda from Bodegas Tradicion. This Paolo Cortado has a little more the character of an Amontillado so with more spirit. Bottling is done no more than once a year and 2,150 bottles have been made from this bottling. This 100% Palomino Vino comes from a very special selection aged in the traditional Solera system for many decades in American oak (this version comes from barrels of 32 years old). The sherry is not blended, caramelized and filtered and is very pure. In the glass the wine reveals a delicate, elegant nose very well structured.
The wine has a beautiful amber gold color in the glass. In the nose, the sherry is very complex with bitter notes, almond, candied fruit and light medicinal notes. The wine is
silky and round on arrival but then comes the complexity with salty taste buds and refined somewhat bitter tones. This is a great companion for (Iberian) pig products such as the Jamon Bellota that we also have in our range. Also great with smoked fish such as mackerel and eel.

Bodegas Tradición is one of Spain's leading sherry producers. The sherry is made according to the traditional solera system, is given an unprecedented long wood aging and is produced in small numbers. The logo of Bodegas Tradición shows a man pouring the wine manually, this is not a lie. During the production process, work is carried out according to traditional methods, without the use of machines. The result of the manual mixing of the wines and the long wood aging is a top quality product with the same, consistent quality every year. No coloring agents are added to the sherries and they are not filtered or heated. This is 'the real thing', sherry as sherry should be. Bodegas Tradición was founded in 1998 by Joaquín Rivero. At first glance, this seems like a relatively new winery from Jerez, but the origin of this house is 'Bodega CZ, J.M. Rivero'. This bodega dates back to the year 1650 and is known as the oldest sherry bodega in Spain. Bodegas Tradición is therefore the successor of a bodega that still did business with the royal houses of Spain and Portugal. The name Tradición refers to a return of the traditional style of sherry, but also to the continuity of the family business.
