The NV Solear Manzanilla is 100% Palomino from the vineyards of Gibalbin and Santa Lucia, grown on albariza soils and aged an average of seven years under a veil of flor. The perfumed nose is dominated by toasted almonds, dry flowers (chamomile), bread dough and a hint of sea breeze. On the palate, the Solear is medium bodied, fresh and penetrating with a long finish. A subtle Manzanilla, ideal for tapas and sushi, but if you want to be innovative and surprising, then you should try this dry sherry with Iberico ham !!
Bodegas Barbadillo has released the Rama version of their popular Manzanilla. Bodegas Barbadillo is in fact the pioneer of the whole Manzanilla style with probably a first bottling in 1821. Only +/- 2000 are released per year for each saca. The wines are bottled with minimal filtration and clarified using egg whites just like in the olden days.
