Bodegas Barbadillo has released the Rama version of their popular Manzanilla. Bodegas Barbadillo is in fact the pioneer in the entire Manzanilla style with probably a first bottling in 1821. The wines are bottled with minimal filtering, using protein just like in the old days.

The NV Manzanilla Pasada and Rama Pastora differs exclusively from the Solear and Rama as the wine is a bit older. This Manzanilla comes from the Pastora winery, but the wine is the same as the Solear. The wine is a bit heavier, with more "body" and just a bit fuller in the mouth, but it's all about details. The Pastora has a yellow color with golden accents in the glass. In the nose it has a fragrant aroma. In the mouth the arrival is soft, friendly, with bitter notes and somewhat salty. The aftertaste is long and tasty. This is a wine that is an excellent companion to beautiful Iberico ham but if you want to be innovative and surprising then you should give this dry sherry with (fish) sushi - you will be amazed
