2022 Spier Sauvignon Blanc Signature

The sauvignon loves the coolness of the nearby ocean, which is only 25 kilometers away from the vineyards of this sauvignon blanc. As a result, the average temperature here in the summer months does not exceed around 22°C. In addition, it was decided to plant on the southern slopes, which are the coolest here in the Southern Hemisphere. This produces grapes with a nice freshness, perfect for a nice Sauvignon. Cool and slow fermentation gives it its special fruit, which is so characteristic of the sauvignon blanc. Maturation on the yeast cells for a few months gives it even more strength and character, resulting in a delicious, sparkling Sauvignon blanc. Pleasant aperitif, delicious with grilled tuna with a caper sauce, salad with goat cheese.
