Pinotage has earned its own place in South African viticulture. This crossing of Pinot Noir and Cinsault produces grapes and wines with a character all of their own. In the early days there was a problem, because the wines had a lot of acidity and tannin. But now the winemakers know how to handle the Pinotage. The grapes are harvested much more mature and in winemaking more emphasis is placed on the fruit, as with this wine. This is achieved, among other things, by cold soaking on the skins for two days. At that time, the wine does not ferment, because of the cold, but the juice absorbs color and soft tannin from the skins of the grapes. The wine is given more depth and complexity by aging 20% in French oak barrels for about 8 to 10 months, depending on the vintage. The rest of the wine is aged in stainless steel with French oak bars, which give it some extra wood aroma. A delicious red wine, with a playful harmony between wood and fruit.

The Spier Pinotage from the Signature series has a beautiful cherry red color in the glass with in the nose notes of sweet fruit, cranberries, raspberries, ripe plums, spiciness, with a fresh and full taste in the mouth, soft and exciting, fine fruit , earthy, a bit sour. This Spier Pinotage is a medium-strength, dry red wine. Very tasty with marinated lamb chops from the grill, hamburger with caramelized onions, soft cheeses.

The roots of the house Spier go back to the early years of the colony on the Cape, in 1692. In that year the original farm in Stellenbosch was founded by the German settler Arnout Janz. He was also the one who realized that the soil was very suitable for viticulture, and planted the first vines. The first grapes were pressed, and the Old Cellar, built in 1767, is one of the Cape's oldest wineries. It is still the proud possession of the domain. Today, Spier is one of South Africa's most innovative wineries with a cellar that has been modernized and expanded in recent years to fulfill its great ambitions. And in the same light we must see the expansion of the vineyard area, where the full control of a large team of experienced and talented winemakers is present under the leadership of the chief winemaker, Frans Smit.

According to Spier winemakers, winemaking is an art. The grapes for the Classic Range are grown in specially selected vineyards, picked at optimum ripeness and vinified in such a way that all the characteristics of the wines are well preserved. Light wood aging provides an elegant background next to the fruit notes. The grapes of the Private Collection wines are hand selected in the old, single variety vineyards. After vinification, the wines undergo aging in French oak barrels. Only then will the final selection of the wines take place, because only the best wines are allowed to bear the 'Private Collection' predicate. The wines of the Spier Estate in Stellenbosch are organically produced which means that no fertilizers, chemical pesticides and no pesticides such as herbicides are used.
