In 1962, 19 winemakers, determined to demonstrate the high potential of wines from Salento, founded "Cantine San Marzano". From the silver sea of olive trees, the white stones at noon, the luminous secrets woven into lace, and languidly inviting baroque palaces, comes Edda, a "feminine" wine, with a mineral, timeless temperament, an ineffable fruit in a land of charm. Despite the fact that Puglia is mainly the domain of Italian grape varieties, the chardonnay also thrives here. This also bears witness to the well-known Rivera Preludio no.1 and Rivera Lama dei Corvi - the trendsetters with refined Chardonnays from Puglia. This is partly due to the cool sea breeze that blows through the vineyards at night. This allows the grapes to build up the necessary freshness. This ensures the desired acidity and a good balance between fruit, acids and alcohol.

The San Marzano EDDA Bianco Salento is predominantly Chardonnay with a bit of two special indigenous grapes, the Moscatello selvatico and the Fiano. The Moscatello selvatico is a spontaneous crossing of Moscato di Alessandria and Bombino Bianco and is very rare. Due to its low yields, it is not popular with winegrowers, but the taste is spectacular. Fiano is an original southern Italian. It barely survived the phylloxera layer, but is now on the rise because of its aromatic qualities. The vineyards are located near the sea at about 100 meters above sea level. Cold maceration and alcoholic fermentation in French oak barrels. After the alcoholic fermentation, the wine matures for another 4 months "sur lie" with weekly bâtonnage.

In the glass, the EDDA Bianco has a straw yellow color with golden reflections; soft citrus fruits and delicate floral vanilla notes fill the nose. The taste is generous, elegant, fresh, delicate and mineral. The finish is long and soft with a hint of green herbs. The wine goes well with starters and intermediate dishes of fish and shellfish, summer meal salads with chicken or shrimp. But above all a great accompaniment to creamy cheeses.
