2021 Pieropan La Rocca Soave Classico BIO

Leonildo Pieropan is seen as the godfather of Soave. The wines are made from the garganega and trebbiano grapes from the hills around the town of Soave. The special cuvée La Rocca, made from late-picked grapes, is raised in French oak and has won many international awards. Andrea and Dario continue their father's work and, in addition to the famous Soave, also make red wines of exceptional quality. After studying regional grape varieties, terroir and microclimate, in 1999 the company purchased vineyards and real estate in Cellore d'Ilasi (Valpolicella and Amarone). A beautiful Valpolicella, Ruberpan and a complex and rich Amarone are now made from corvina, corvinone, rondinella and croatina veronese. The old fifteenth-century monastery on the domain, Villa Cipolla, is currently being restored and converted into a luxury agriturismo.

The La Rocca Soave Classico is Pieropan's top model. The garganega grapes are harvested (very) late in order to obtain an optimal degree of ripeness. Gentle pneumatic pressing separates the juices from the skins. After a short settling period of 2 days, the juices are transferred, partly to stainless steel tanks with temperature control, partly to 500 liter drums. At 20°C, the juices ferment very slowly. The young wine is given time to develop and is then aged on wood for 1 year: 60% remains in the 500-litre barrels, the rest in large barrels with a capacity of 2000 litres. After assembling and bottling, the wine rests in the bottle for another 4 months.

In the glass, Pieropan's La Rocca Soave Classico is clear and sparkling with an intense (light) yellow colour. It is a characterful wine with aromas of exotic fruit and nuts. Soft and captivating on the palate, with impressions of citrus fruits, spices and vanilla. This Soave is an ideal accompaniment to firm and tasty fish and crustaceans (lobster, crab). Also recommended with white meat, rabbit and chicken in light sauces.
