2021 Les Bories Merlot

The wine is made from 100% Merlot. A very fine nose with lots of ripe fruit and something vegetarian. Broad, mouth-filling and fruity taste, with ripe tannins that melt in the mouth. A pleasant glass of wine! The wine is common in the better catering industry. In addition to the price, this is certainly because this is a wine that everyone finds enjoyable, not too heavy and does not get bored with a second glass.

The vines are mostly planted on calcareous soil. And the harvest is completely manual and the grapes are strictly selected.

Vinification: long fermentation at low temperature. Before fermentation, the solids are separated from the must, so that a clear juice can be fermented. This appears to make the wine fresher and purer than a fermentation of cloudy juices.
