The Bader-Mimeur Les Houillères Chassagne-Montrachet is a beautiful wine and of course made from 100% Chardonnay coming from the 1st Cru vineyards from Chassagne-Montrachet AC. After pressing the grapes, the juice is stored in large barrels for about 12 hours. Then they drain the juice into smaller barrels lower in the cellar. This whole process is only influenced by gravity. The grapes come from different "plots" and are all vinified separately. This is done in smaller oak barrels of the best quality. Every year, about 20% of the barrels are renewed so that the taste balance in the wine comes into its own. The alcoholic and malolactic fermentation naturally follow each other, after which the maturation process begins. For the winery's white wines, this takes about 10-14 months.
The Bader-Mimeur Les Houillères Chassagne-Montrachet has a bright light yellow color with light gray accents. Accurate nose of flowers, white fruit, hints of vanilla and butter. An excellent balance between roundness and acidity. To drink with Burgundian dishes in sauce."
Bader – Mimeur is located below the famous vineyards of Montrachet. Since the seventeenth century, the BADER-MIMEUR family has owned and managed vines in and around Chassagne-Montrachet for more than ten generations, especially in the Côte de BEAUNE. Charles BADER, Marie Pierette NIE and the son of PHILIPPE BADER, were wine merchants in “Halle-aux-Vins” in Paris. He married Elise MIMEUR in 1920, whose father, Charles MIMEUR, owned the "Domaine du Château de Chassagne-Montrachet". The name BADER-MIMEUR was born. The domain has been led by brother and sister since 2017; Sebastien Fossier and Nathalie Bernard. From the 17th century, the Bader-Nié family owned vineyards in Chassagne-Montrachet and the surrounding area, while Charles Mimeur, winegrower from the Maranges region, became the owner of the Château de Chassagne-Montrachet in 1919. Since 2017, Nathalie Bernard and her brother Sébastien Fossier the day-to-day management of Baeder-Mimeur.

Since 2017, Nathalie Bernard and her brother Sébastien Fossier have been in charge of Baeder-Mimeur on a daily basis. The Domain has a very impressive barrel cellar and is beautifully situated in the hills of Montrachet.
The Bader-Mimeur Burgundian family estate covers 8 hectares with about 60% Chardonnay, 40% Pinot noir coming from the appellations: Chassagne-Montrachet, Saint-Aubin 1er cru and Bourgogne. The Bader-Mimeur family owns and manages 98% of the Château de Chassagne-Montrachet vineyard. The red and white fine burgundy wines are produced using traditional methods: hand-picked grapes, aging in French oak barrels, natural fermentation and manual punch down of Pinot Noir.
