The grapes for the Lievland Vineyards Cellar Reserve Organic Cabernet Merlot are hand-picked, destemmed and, after a two-day cold skin maceration, left in an open tank for a period of 7 days. The must is regularly moved and the so-called “hat” pressed down to extract more smell, color and flavor from the must. The wine then matures for 12 months in French oak.
