2020 Domaine des Caillots Touraine Sauvignon Terres de Silex

The Domaine des Caillots Touraine Sauvignon Terres de Silex is, as the name suggests, a 100% Sauvignon Blanc coming from the famous Slex soils (the sandy soil with flint-like clay). After the manual picking, the fermentation takes place in stainless steel barrel at 17 – 19° c. They choose not to do this too cold in order to preserve the typicity of the terroir. After fermentation, the wine matures on its lees (sur lie) for 4 – 6 months in stainless steel tank. In the glass, this beautiful Touraine wine has a straw yellow color with green accents. In the nose we smell aromas of spring flowers, hawthorn and acacia and of course a little citrus and freshly cut grass. On the palate, the wine is fresh, lively with a fruity mouth with flavors of citrus, lemon and grapefruit. With time the vegetal notes disappear and give way to ripe fruit wild peach and apricot, associated with mineral taste typical of these Silex soils
