Château Astruc, at the foot of the Pyrenees, consists of 50 hectares, 25 of which are planted in the Limoux appellation. This is a unique terroir, very different from the rest of the Languedoc, where different climatic influences come together, the Mediterranean and the Oceanic being the main ones. On the hills of the Aude Valley, Chardonnay is king, but red grape varieties are also important: Pinot Noir, Cabernet Sauvignon, Cabernet Franc, Merlot and Malbec.
The Chardonnay range of Paul Mas starts with the Chardonnay without oak aging, followed by the Chardonnay Reserve and the Les Faisses and then the top model de Teramas which of the 3 oak aged chardonnay wines gets the longest aging (oak aging). It also comes from a special vineyard with a unique soil with a lot of lime and gravel hence also a combination of Terroir and Mas - Teramas.
The Teramas Astruc Chardonnay AOC Limoux is a 100% Chardonnay from the Appellation d'Origine Protégée - Limoux. The vineyards are quite high and remain in excellent health due to the proximity to the sea so chemical intervention is not necessary and the sea breezes keep the vineyard in top condition. The grapes are picked manually. The grapes are lightly pressed (Bucher press) with slow fermentation at low temperature in oak barrels, with partial malolactic fermentation (60%). The wine is then aged for 9 months in oak barrels (1/3 of the barrels are new oak and 2/3 are 2 years old). Half of the oak is French, the other half American.
The Domaine Astruc Teramas Chardonnay Limoux has a light color in the glass with shiny golden shades. The nose is intense and complex, with buttery flavors and tropical fruit along with white flowers. The wine is full bodied with pleasant elegance and remarkable balance. In the first five years, you will enjoy the fruit aromas which will then turn into more ripe and complex aromas. The Teramas is a combination of the Terroir of Paul Mas - TERAMAS
The ideal drinking temperature is between 10/12 ° C. The Teramas Astruc Limoux Chardonnay fits perfectly with a crustacean risotto or veal sweetbreads. After a little aging, it will be a perfect match with creamy mushroom soup, roasted chicken with truffle puree or Tong Meunière.
Jean Astruc, coachman in Limoux, has a dream: his own wine estate. The dream came true in 1862, with the acquisition of 12 hectares of vineyard in Malras. His son Jean Astruc has the same ideal and continues to acquire land despite the crisis and his departure to the battlefields of the First World War. In the 1950s, his son Pierre inherited the Domaine Astruc. It then includes over 30 hectares of vineyard and the resources to exploit it. In 1977, after completing his studies, Pierre's son, Jacques Astruc, returned to Malras to continue building the Domaine Astruc with his father.
The Domaine Astruc has continued to grow since then and has been turned into a modern winery, which presses the grapes from over 400 hectares of vineyard, harvested by about a hundred farmers. Annual production is 21,000 hectoliters. Jean-Claude Mas enters the picture in 2003: owner and winemaker of Les Domaines Paul Mas, a successful and independent family business in Pezenas, also in Languedoc. He had long worked with Astruc - the main source of their Vin de Pays wines - and decided to buy the Domaine. The d'A series is the first fruit of this purchase.
