The grapes for the Casal das Freiras Touriga Nacional & Cabernet Sauvignon are, as with all their wines, completely hand-picked with a first selection in the vineyard. The grapes are completely destemmed and softly crushed before fermenting for a long period in stainless steel tanks with an extended period of maceration in concrete at a controlled temperature with frequent dipping of the must to get maximum extraction. About 50% of the wine remains in stainless steel and 50% stays in oak barrels for a period of about 12 months before it is bottled. At Casal das Freiras they certainly want to give the Touriga all the time to mature well, so the wine stays in the bottle for at least 6 months
The marriage between Touriga National and Cabernet Sauvignon results in a full-bodied wine, with intense colours, lively acidity and tannins, enlivening the dark fruit profiles common to both grapes, such as blackcurrant, blueberry and cherry, with mint notes and refined with the presence of Touriga's typical floral aromas of violets. This is a great glass with a unique price/quality ratio as we (still) see it in Portugal. The wine has a nice alcohol percentage of 13.5% and good acidity and all this makes this an excellent wine with a lamb stew with pruneaux, some Moroccan tagine dishes, hearty dishes with a clear Portuguese signature. Also the famous Estrella cheese from Portugal.
