2019 Francis Ford Coppola Winery Diamond Collection Paso Robles Cabernet Sauvignon
Over the years, Coppola added new varieties and blends to the Diamond Collection, especially as they found new and unique vineyards. This tradition continues with the Diamond Collection Appellation Series Cabernet Sauvignon, the first wine in the Diamond Collection made from grapes from the Paso Robles appellation. Paso Robles is an appellation known for its variety of topography, soils and mesoclimates. The name means Eiken Pass or the Pass of the Oaks. The blend consists of 89% cabernet sauvignon and is supplemented for 6% with petit verdot, which provides spice and color to the wine. The 4% petite sirah give the wine depth and concentration in taste and colour. The remaining 1% is supplemented by the tannat grape. Before the wine is bottled, it matures for 10 months in French oak barrels.
The Francis Ford Coppola Winery Diamond Collection Paso Robles Cabernet Sauvignon is mainly cabernet savigno supplemented with a little petit verdot and petite sirah. In the glass, this Paso Robles Coppola has a fresh ruby red color with notes of almonds, sandalwood, coffee, vanilla and black fruit in the nose. On the palate, the wine is concentrated with ripe stone fruit accompanied by a touch of toasted oak. Delicious with Coq au Vin, ribeye steak or portobello mushrooms.
