Domaines Paul Mas was founded in 1892. The current owner is Jean-Claude Mas and this is undoubtedly the pioneer in the field of the revival of the Languedoc as a region for quality wines. Jean-Claude characterizes his wines as 'Le Luxe Rural', rural luxury. With international grape varieties, he has given the Languedoc 'new world' allure. And with his fashionable wines from local grapes, he has made the local character of the Languedoc hip again for wine lovers. Hubrecht Duijker rightly calls Jean-Claude Mas a 'wine wizard' and at Grandcruwijnen we are the only ones in the Netherlands who also carry Paul Mas 's high end Grandcrus .
The "Que Sera Sirah" is a hymn to the Syrah from the Languedoc. One blends this wine from Shiraz grapes from three different regions (Nicole Estate in Montagnac, the foothills of the Montagne Noire and the Aude Upper Valley). This 100% Syrah comes from vineyards between 28 and 45 years old with sea views so the sea breeze ensures a healthy vineyard. Harvesting is prevented during the night to prevent premature fermentation. The fermentation is carried out at 30 ° C for a maximum of 5 days at a controlled temperature of 25 ° C. After the fermentation, the maceration takes 30 days at a maximum of 25 ° C with a daily pumping. After maceration, the wine is pressed with a pneumatic press. The pressed wine is partially mixed with free-flowing juice. After malolactic fermentation, 30% of the wine is put into 225 liters of American oak barrels.
In the glass, the Que Sera Sirah is garnet red with violet reflections. In the nose this syrah is first spicy with a balsamic scent, then comes the aromas of cassis, tobacco and violet and some charcoal. On the palate the wine is well balanced with rich and supple tannins. Aromas of ripe and floral fruit with a sweet and spicy finish.
Serve this tasty and pleasant wine at 17 ° C. Perfect to enjoy as a stand-alone glass and is a great companion for grilled red meat, steak, strong or milder cheeses. This Que Sera Sirah can age perfectly without problems in the coming 10 years.
