The Belle Rebelle is the Beautiful Estate range. Winemaker Mariëtte exclusively uses grapes from Stofberg Family Vineyards for the production of these wines. It focuses on expressing the terroir of the Breedekloof and more specifically the soils on the farm. Vineyards are carefully managed to suit each of the vines. Due to the size of the operation, the grapes can be harvested when they are optimally ripe.
The shiraz grapes are harvested with. The grapes are then cooled before being sorted by hand and lightly crushed. The grapes are cold soaked for 48 hours to promote flavor and color extraction. The juice is inoculated with yeast and fermentation takes place for 5 days at 24-27C. The juice and zest are pressed every 4 hours until squeezed. The wine is transferred to 225L French oak barrels for malolactic fermentation and 18 months barrel aging.
Belle Rebelle Mia Shiraz Barrique Aged is a dark, ruby red wine and has an intense mix of blackberries and cassis in the nose. The palette begins with flavors of ripe plum and dark chocolate, supported by a light smokiness with well-integrated oak and soft, silky tannins. This is a perfectly balanced wine that should be enjoyed in good company. Because it is a full-bodied wine with a lot of structure, it goes well with tasty dishes such as lamb, pork belly and fillet. It will enrich most venison dishes, especially kudoe fillet, and will certainly go well with cheese, wild mushroom risotto and dark bitter chocolate.
BREEDEKLOOF: The Du Toitskloof mountain range feeds the Breede River and our farm with crystal clear water. The Breedekloof Valley is home to some of the oldest soils in the world that come from the mountain ranges that surround it. These ancient soils have a great complexity that allows a wide range of grape varieties to be grown here. The temperate weather conditions during the growing season mean that the grapes have one of the longest growing seasons, hence it is known as the valley of slow maturing vines.
STOFBERG FAMILY VINEYARDS: Pieter Stofberg, the owner of the farm has always believed that quality starts in the vineyard. The vineyards are carefully managed by hand, with operations such as sucking, leafing, tilting and harvesting still done by hand - in keeping with the concept of making truly handcrafted wines. Integrated pest control is applied on the farm with as little interference from nature as possible.
