What Redheads do best - they sift through small packages of great quality grapes, packed with flavour, and then piece them together, to create a wine with abundant character and plenty of classy panache. The Atus underwent small batch open fermentation before being dipped by hand. We then gave the wine a little longer maceration on the skins to enhance the taste. Matured for 14 months in oak in a combination of new and used French and American oak barrels.
Vin'atus: will the jolly Spanish trio on the label dance, play the violin or shoot its bow? It's all part of the game, the wine game: 'vinum vinatus', or in Australian dialect 'vin'atus'. The three grapes may be Spanish, but this is 100% an Aussie wine! The grapes come from a small family business in One Tree Hill, between Barossa and the Adelaide Hills. During the day it is warm, at night the coolness comes from the hills.
Plum and sour cherry notes with white pepper, vanilla and spices, like Christmas! Silky tannins on the palate with juicy fruit to sustain and it's followed by lingering sweet oak notes. What is not in dispute is that the wine is a luscious, large, spicy glass dish of dark cherry fruit and a smoky, toasty length. The grapes may be Spanish stars, but the wine is 100% pure Aussie. Goes well with: Beef, Lamb, Pork, Game (venison), Spicy dishes and Hard and matured cheese.

It all started with a few Aussie winemakers who went to France to show the 'old hands' some new tricks there. Australian wine had conquered the world in the 1970s and 1980s. That's why Tony Laithwaite brought some Aussies to France. It was there that the very beginning of RedHead's new viticultural movement was laid.
In a small shed in McLaren Vale, a former Indian restaurant, some winemakers took on the challenge of making their dream come true: making beautiful, creative wines in small volumes with primary focus on quality.
They wanted to make wines without being bothered by all kinds of business worries, which resulted in an explosion of creativity and experiments.
