The Prosper Maufoux Bourgogne Hautes-Côtes de Beaune comes from the Appelatie Hautes-Côtes de Beaune. The total of all the vineyards of the Hautes-Côtes de Beaune cover about 800 hectares, spread over 30 municipalities. The terroir, especially the climate, differs from the higher elevation of the vineyards, from 280 to 550 m, leading to precise wines whose character is increasingly in demand.
Immediately after the manual harvest, the grapes are sorted, destemmed and then carefully transported on a belt in the barrel, without pumping. For the fermentation, a cold maceration is carried out at 10°C for 4 to 5 days. The wine is aged for 10 months in stainless steel tanks and oak barrels, of which 20% are new oak barrels
The Prosper Maufoux Hautes Côtes de Beaune Pinot Noir has a lot of character, aromatic intensity and length in the mouth. It has a beautiful intense red color and reveals aromas of cherry, licorice and undergrowth. In summary, a very high quality Pinot Noir. A wonderfully elegant glass to enjoy and perfect with a fricassee of Bresse chicken with pistachios. As we advise with a lot of red wine, but certainly with Pinot Noirs, the motto is not to drink it too hot (14-15°) and to serve it in a large Burgundy glass .
