Philippe Pacalet is a winemaker who does not own any land. At the start in 2001, a conscious decision was made to rent only plots in view of the astronomical amounts that are asked for the purchase of vineyards in the Côtes de Nuits and Côtes de Beaune. Philippe is a cousin of Marcel Lapierre and an admirer of Jules Chauvet. It should come as no surprise with these 2 as a source of inspiration and mentor, the approach is to make wines as natural as possible.
Since 2008, it has a 19th century building in the heart of Beaune for the vinification and elevation of its wines. The harvest is not destemmed, the fermentation takes place in open wooden casks, and no sulfur is used during this process. The bottling is done manually, without pumps and only by using gravity after an elevation on barriques (never new). The wines of Pacalet are distinguished by an unseen aromatic purity. They do not grab you by the throat but seduce you by their freshness and elegance.
This Pacalet Bourgogne comes from the famous AOC Nuits-Saint George appellation and is a 100% Pinot Noir. The fermentation takes place in open wooden cuves using our own yeast cells. Extraction by pigeage (by feet) for 3-4 weeks. The rearing is "sur lies" on oak barriques of 1-3 years for 15-18 months without SO2 (sulphur). The wine without is not filtered before bottling. Everything is done according to the principles of biodynamic viticulture.
The Pacalet Nuits Saint George comes from grapes that come from two parcels of Saint Georges Villages, harvested from approximately 45 years old vines. The wine has an infinite richness with green herbs at the beginning but then there are many layers with berries, sour cherry, blackberry, plum, black pepper, sage and mustard. A refined and very exciting wine. The wine is good to drink (but then decanter) but will refine even further with time.
