Description
The Jean-Claude Bachelet Chassagne-Montrachet Les Encégnières is a rich and meaty Chassagne-Montrachet and bursting with aromas of pear, citrus oil, white flowers and nutmeg. Medium to full, satiny texture it is bright and charming. Parker writes " ....The more I drink the Bachelet bothers' wines, the more I admire them "
The overarching goal of Domaine Jean-Claude Bachelet & Fils is to create wines that reflect the unique terroirs. Vinification is carried out with native yeasts found on the grape skins, and fermentation is not rushed. The wine is aged for 18 months in French oak barrels on the fine lees. With a further two years in the cellar aging on the fine lees, this is where the wine develops its finesse and elegance.
Domaine Jean-Claude Bachelet & Fils extends over 10 hectares with plots of vineyards in Saint-Aubin, Chassagne-Montrachet and Puligny-Montrachet. Each plot offers a unique geographical location and allows them to create a range of wines with diversity. Much emphasis is placed on the importance of sustainable viticulture; the wine quality is a direct reflection of the work in the vineyards.
The domain's origins date back to the 17th century - as early as 1648, Pierre Bachelet was cultivating vineyards in the celebrated Chassagne-Montrachet region. The legacy is carried on in the hands of Jean-Claude and his sons, Benoît and Jean-Baptiste.

Wijnhuis
Weingut Polz is located on the Grassnitzberg in Austria's southern wine region, Südsteiermark. This family business has a rich history that dates back to 1912, when Johann Polz took his first steps in viticulture. Today, the winery is run by the fourth generation, who continue to improve the quality of their grapes and wines with sustainable viticulture and modern technologies.
Although Austria is known for Grüner Veltliner, it is the Sauvignon Blanc grape that steals the show in Südsteiermark. About one fifth of the vineyard area in this region is planted with this grape variety. Sauvignon blanc thrives in the hilly landscape and the relatively mild climate with cool nights. The wines range from fresh and fruity to subtle and elegant.
Weingut Polz offers a wide range of wines, including the well-known Sauvignon Blanc, Weissburgunder and Morillon (local name for Chardonnay). All grapes are harvested by hand. The vinification takes place in stainless steel tanks or large wooden barrels. Everything is aimed at preserving the grape's own aromas and freshness.
In addition to making beautiful wines, Weingut Polz is also focused on sustainability and the preservation of biodiversity, and they try to minimize the impact of their winegrowing activities on the environment. They are currently in the process of converting to organic viticulture.
