Es, according to Freud, is: "instinct and unbridled passion (the same with which this wine has been produced), without rules, without limitations, beyond space, time, logic and morality. It knows no good or bad. Es is subject to a single principle:" PLEASURE" Gianfranco Fino started this domain in 2004 when he bought a 50-year-old vineyard Primitivo. Despite its recent start, the domain is already a reference point in the region. The wines already have a cult status among wine journalists and aficionados. The ES Red or the ES Riserva is the top model of this great wine and is only made in the top years such as this 2018. An absurdly low yield ensures an unprecedented wine from the Primitivo grape. The primitivo grapes for the Gianfranco Es already come from a very small vineyard, but what makes it completely unique (and therefore also explains the price) is that on average only 200 grams of grapes are harvested per vine . So through aggressive pruning only a few bunches are kept on the vine, but they also get all the food that the old vines bring up from deep in the ground. The wine is grown according to biodynamic principles. The ES Riserva contains the best grapes coming from the best plot from its vineyard.

For the Gianfranco Es Riserva, the grapes are allowed to wither on the plant for some time. This process is called Appassimento and Gianfranco is the absolute reference for good appassimento wines (full, beautiful fruit but also with fresh acidity). When the time is right, the withered grapes are harvested by hand in plastic crates with careful selection of the bunches and transported in refrigerated trucks. The grapes are destemmed, very gently crushed, maceration in stainless steel tanks with 3-4 weeks contact of the skins with the must, control of the temperature of the cap, 2 daily délestages, soft pressing of the skins with hydraulic vertical crusher. After approx. 12 months of oak maturation, the wine is bottled without the aid of fining agents and then receives a further 4 years (48 months) of bottle aging before being released on the market (so this vintage did not become available until 2023). Only around ce 800-1,000 bottles are made of the ES Riserva.
